Bakery and Pastry Chef
Purpose of Position:
To oversee the creation and preparation of high-quality bakery and pastry items, ensuring excellence in taste, texture, and presentation. The Bakery and Pastry Chef leads the pastry team, manages daily production, and contributes innovative ideas to enhance the dessert and bakery offerings.
Duties and Responsibilities:
- Plan, prepare, and produce a wide range of bakery and pastry items, ensuring consistency and quality in every product.
- Develop new dessert and bakery recipes, incorporating creativity and seasonal ingredients to refresh menu offerings.
- Supervise and train pastry and bakery staff, ensuring adherence to recipes, techniques, and presentation standards.
- Monitor production schedules to meet demand efficiently while minimizing waste.
- Ensure proper storage, labeling, and rotation of ingredients and finished products according to food safety standards.
- Maintain cleanliness and organization of the bakery and pastry kitchen, upholding hygiene and safety protocols.
- Oversee the decoration, finishing, and presentation of desserts and baked goods to ensure a high visual and quality standard.
- Collaborate with the Executive Chef or F&B Manager to plan menus, cost control, and inventory management.
- Manage ordering and stock levels of ingredients, tools, and supplies, ensuring efficient and cost-effective operations.
- Maintain equipment in good working condition and coordinate maintenance or repairs as needed.
Skills and Abilities:
- Strong expertise in bakery and pastry techniques, including bread making, viennoiserie, cakes, tarts, and plated desserts.
- Proven creativity and innovation in recipe development and dessert presentation.
- Excellent leadership and communication skills to guide and motivate a pastry team.
- High attention to detail, precision, and consistency in all aspects of preparation and presentation.
- Solid organizational and time management skills to handle multiple tasks and meet production deadlines.
- Deep understanding of food safety, hygiene, and HACCP standards.
- Ability to work collaboratively with other kitchen departments to ensure smooth operations.
- Knowledge of ingredient quality, flavor pairing, and texture balance.
