Job Description
  • Track and analyze food and beverage costs and provide monthly reports on variance between budgeted and actual expenses.
  • Monitor inventory levels, ensuring timely reordering while minimizing waste.
  • Maintain cost control standards to ensure that purchasing aligns with operational needs and budgets.
  • Review and analyze the pricing structure for all catering and F&B services to ensure competitiveness and profitability.
  • Develop, review, and manage the F&B cost control budget, working closely with finance and management teams.
  • Forecast food and beverage costs based on market trends, seasonality, and operational changes.
  • Implement strategies to reduce waste, optimize portion control, and improve operational efficiency.
  • Supervise inventory controls, ensuring that stock levels are regularly monitored, orders are timely, and wastage is minimized.
  • Oversee the procurement process, including working with suppliers and ensuring that best pricing is negotiated.
  • Conduct regular stock counts and ensure that all products are properly accounted for.
  • Prepare and present weekly and monthly financial reports on food and beverage cost performance to senior management.
  • Analyze cost trends, identifying opportunities for cost savings and efficiency improvements.
  • Conduct regular audits of purchasing and inventory data to ensure accuracy and alignment with budgets.
  • Work closely with the kitchen and service staff to identify opportunities for reducing food wastage and improving operational practices.
  • Collaborate with the F&B manager to set pricing strategies and control costs without sacrificing quality.
  • Provide training to staff on cost control procedures, portioning, and efficient use of resources.
  • Ensure compliance with all relevant industry standards, laws, and regulations regarding food safety, purchasing, and pricing.
  • Maintain a high level of control and ensure standards are met in food production and service.
  • Establish and maintain positive working relationships with suppliers and negotiate terms and contracts.
  • Conduct periodic supplier performance evaluations to ensure quality and value for money.
