 Job Scope:
 
 
 
 Reporting to the Area Manager and following all Patchi Caf&eacute; policies and procedures, the Caf&eacute; Manager is responsible for the overall performance of the Caf&eacute;, including but not limited to maintaining high quality of service and health and safety standards in the Front-of-House and Back-of-House.
 
 
 
 
 
 
 Duties &amp; Responsibilities:
 
 
 <ul>
 <li>
 Oversee the entire Front-of-House and Back-of-House operations and ensure that they run efficiently and profitably as per pre-set budgets and procedures (including but not limited to product/service quality and presentation, staff/workplace health and safety, service standards, maintenance and hygiene of facilities, guest satisfaction, safety and hygiene, etc.)
 </li>
 <li>
 Support the team and help in any area of the caf&eacute; when circumstances dictate.
 </li>
 <li>
 Ensure Patchi Caf&eacute;&rsquo;s dress code and grooming standards are respected by all employees.
 </li>
 <li>
 Ensure all food safety procedures are strictly adhered to according to Patchi Caf&eacute; standards.
 </li>
 <li>
 Maintain safe working conditions; ensure the safety and hygiene standards of Patchi Caf&eacute; premises are being followed.
 </li>
 <li>
 Maintain a favorable relationship with all Patchi Caf&eacute; employees to foster and promote a cooperative and harmonious working climate conducive to maximizing morale, productivity, and efficiency.
 </li>
 <li>
 Preparing and completing action plans for the team including daily responsibilities.
 </li>
 <li>
 Implementing production, productivity, quality, and guest-service standards.
 </li>
 <li>
 Resolving team issues and guest complaints as per Patchi Caf&eacute;&rsquo;s standards.
 </li>
 <li>
 Implementing changes as directed by Patchi Caf&eacute;&rsquo;s Operations Manager/Area Manager.
 </li>
 <li>
 Submit to the Area Manager a weekly report including but not limited to sales, guest satisfaction, actual performance versus forecasted, operational concerns, and suggestions for improvement; work in coordination with the Head Chef whenever deemed necessary.
 </li>
 <li>
 Be responsible for identifying and following up on all Front-of-House and Back-of-House maintenance issues.
 </li>
 <li>
 Work in coordination with the Cost Controller and procurement team to control costs by reviewing waste sheets, inventory reports, and purchase orders.
 </li>
 <li>
 Ensure that stock levels are always as per the set Patchi Caf&eacute; PAR levels and operational requirements.
 </li>
 <li>
 Revise and approve all Front-of-House requisition orders; ensure they comply with set PAR levels.
 </li>
 <li>
 Track stock levels of F&amp;B, supplies, and equipment; forecast needs, and oversee requisitioning.
 </li>
 <li>
 Supervise the receiving procedures; evaluate the quality and quantity of the received materials.
 </li>
 <li>
 Coordinate with the HR Department, whenever deemed necessary, on employee-related topics (reporting to work, payroll, leaves, absences, training, evaluations, etc.)
 </li>
 <li>
 Manage Front-of-House and Back-of-House employees and ensure daily checklists have been completed by the appropriate employees.
 </li>
 <li>
 Supervise, train, and evaluate assigned personnel in the proper use of equipment, menu, service, safety, sanitation standards, guest relations, and related functions.
 </li>
 <li>
 Communicate performance expectations by Job descriptions for each position.
 </li>
 <li>
 Regularly identify training needs and submit training plan(s) to the HR Department in coordination with the Area Manager.
 </li>
 <li>
 Review the daily POS sales report and approve any discounts/complimentary food offered to guests.
 </li>
 <li>
 Monitor, review, and assess customer feedback and take proactive measures to enhance guest experiences accordingly.
 </li>

 Requirements:
 
 
 <ul>
 <li>
 Bachelor&rsquo;s degree in hospitality management or accumulated years of experience and proven capability in management.
 </li>
 <li>
 Proven experience in the Food and Beverage industry with managerial exposure, preferably in a high-end concept.
 </li>
 <li>
 Knowledgeable about Food &amp; Beverage safety, hygiene procedures, and HACCP guidelines.
 </li>
 <li>
 Good command of English and the local language.
 </li>

Cafe Manager

 MAIN RESPONSIBILITIES
 
 
 <ul>
 <li>
 Develop and maintain cost accounting system for chocolate production.
 </li>
 <li>
 Monitor daily raw material, labor, utilities, and overhead costs.
 </li>
 <li>
 Support monthly and quarterly closing processes, ensuring accurate reporting of cost of sales and margins.
 </li>
 <li>
 Conduct variance analysis between standard costs and actual costs, providing explanations and corrective actions.
 </li>
 <li>
 Prepare profitability reports by product, line, client channel (retail, wholesale, B2B, franchise, exports).
 </li>
 <li>
 Recommend cost-saving measures and efficiency improvements.
 </li>
 <li>
 Assist in budgeting, forecasting, and financial planning.
 </li>
 <li>
 Translate all approved recipes from the Chef/Production into
 
 standard cost sheets.
 
 </li>
 <li>
 Break down per ingredient, packaging, labor, and overhead to calculate
 
 cost per batch
 
 and
 
 cost per unit.
 
 </li>
 <li>
 Update recipe costing sheets regularly based on new raw material purchase prices and supplier changes.
 </li>
 <li>
 Work closely with Procurement to reflect real-time ingredient cost fluctuations (e.g., cocoa, nuts, dairy).
 </li>
 <li>
 Conduct
 
 variance analysis
 
 between standard Manufacture costs and actual consumption (Food. Packaging and labour).
 </li>
 <li>
 Provide management with updated COGS and gross margin analysis for each SKU and sales channel.
 </li>
 <li>
 Support new product development by preparing preliminary costing for approval (cost per unit, margin, suggested selling price).
 </li>
 <li>
 Ensure recipe costing aligns with inventory consumption and ERP/Excel batch issuance data.
 </li>
 </ul>
 
 
 Requirements &amp; Skills
 
 
 <ul>
 <li>
 Bachelor&rsquo;s degree in accounting, Finance, or related field.
 </li>
 <li>
 3&ndash;5 years&rsquo; experience in cost control within food manufacturing or FMCG industry.
 </li>
 <li>
 Strong knowledge of cost accounting principles, ERP systems, and Excel.
 </li>
 <li>
 Analytical mindset with attention to detail and accuracy.
 </li>
 <li>
 Familiarity with HACCP, ISO 22000, and food safety principles.
 </li>
 <li>
 Strong communication skills and ability to work cross-functionally with Production, Procurement, and QA.
 </li>
