</p><p><b>Key Responsibilities:</b></p><ul><li><p>
Receive, inspect, and verify quality and quantity of all meat, poultry, and seafood deliveries.</p></li><li>
Perform professional cutting, trimming, deboning, filleting, and portioning.</li><li>
Prepare specialty cuts as per menu specifications and outlet requirements.</li><li>
Ensure proper labeling, dating, and storage of all products (FIFO compliance).</li><li>
Follow HACCP and local municipality food safety regulations.</li><li>
Maintain cleanliness and sanitation of butcher area, equipment, and cold rooms.</li><li>
Ensure temperature control standards are maintained at all times.</li><li>
Conduct daily checks of storage conditions and product freshness.</li><li>
Minimize waste through proper trimming techniques and yield management.</li><li>
Maintain daily production sheets and meat requisition records.</li><li>
Support monthly inventory and stock control procedures.</li><li>
Work closely with Purchasing and Cost Control departments.</li><li>
Assist in developing new menu items and specialty cuts when required.</li><li>
Ensure compliance with IHG Hotels &amp; Resorts policies and procedures.</li></ul><p>
</p><p><b>Key Requirements:</b></p><ul><li>
Culinary Diploma or equivalent certification preferred.</li><li>
HACCP Certification (mandatory).</li><li>
Minimum 3&ndash;5 years of experience as a Butcher Chef in a 4- or 5-star hotel.</li><li>
Experience within international hotel brands preferred.</li><li><p>
Understanding of international cuisine requirements.</p></li><li><p>
Attention to detail and quality-focused mindset.</p></li><li>
Strong organizational and time management skills.</li><li>
Ability to work under pressure during high occupancy periods.</li><li>
Team player with professional communication skills.</li></ul><p>

Butcher Chef - voco™ Riyadh

<div><p><b>Your day to day</b></p><ul><li>Maintain an up-to-date awareness of room status to ensure efficient servicing.</li><li>Assign responsibilities to subordinates and monitor their performance and productivity.</li><li>Ensure the cleanliness and maintenance of all Housekeeping equipment and schedule necessary preventative maintenance and repair work.</li><li>Oversee assignment of the rooms to the Room Attendants for cleaning.</li><li>Check and release vacant clean rooms for sale.</li><li>Conduct random inspection of service rooms.</li><li>Inspect corridors, back of house areas, stairwells, stores, public areas, pantries, car park and garbage areas for hygiene and cleanliness.</li><li>Note down repairs, linen supplies and out-of-order rooms.</li><li>Ensure a stock take of keys is conducted each shift and missing keys are followed up immediately in line with Hotel Policy and Procedures.</li><li>Ensure that par stock of linen and guest supplies in the pantry areas is maintained in accordance with standards.</li><li>Ensure that the Housekeeping Attendants exercise proper discipline and courtesy in attending to the Guests&rsquo; needs/requests.</li><li>Check and counter-sign all daily reports of the Housekeeping Attendants assigned to him/her and to make sure that their reports are correctly filed by the end of their shift.</li><li>Record activities/problems/complaints and follow-up work as necessary in the Logbook.</li><li>Log and store lost property items and send them to guests when required in accordance with Policy and Procedure.</li><li>Liaise with maintenance on all out of order rooms and follow up until returned to service.</li><li>Promote the health, safety and welfare of employees within hotel.</li><li>Provide information, instruction and supervision to employees, guests, contractors and visitors so that safe working procedures are always followed</li><li>To report for duty punctually, always wearing the correct uniform and name badge.</li></ul><div>

GENERAL</b></div><ul><li>Communicate effectively with all other departments</li><li>Ability to work a flexible roster</li><li>Attend meetings, training sessions and any other required meeting or training session.</li><li>Identify opportunities to innovate service delivery and product offering to meet and exceed client expectations.</li><li>Ensure safe work practices are adopted at all time and report any OHS concerns immediately to your direct manager or HR Manager</li><li>Consistently meet hotel standard of room presentation.</li><li>Able to meet productivity targets.</li><li>Guest satisfaction and feedback</li><li>Achieve on time completion of all rooms under supervision in accordance with hotel service standards.</li></ul><div>
