<p>The Steward, reporting directly to the Chief Steward is responsible for maintaining cleanliness and proper storage of all China, glass, and silver, and ensuring the highest standards of sanitation. The incumbent is also responsible for assisting the kitchen staff in maintaining the cleanliness of the kitchen and all storage areas; specifically for cleaning all equipment, utensils, and the physical work area. They are also responsible for assisting with proper food storage and rotation.</p>

<p><b>KEY RESPONSIBILITIES</b></p>
<p></p>
<ul><li>Wash dishes, pots, pans, utensils, and kitchen equipment using dishwashers or manual methods.</li>
<li>Clean and sanitize kitchen surfaces, including countertops, floors, and equipment.</li>
<li>Assist with the proper storage and organization of kitchen equipment and utensils.</li>
<li>Maintain cleanliness and organization of the dishwashing area and other kitchen facilities.</li>
<li>Remove trash and waste from kitchen areas and ensure proper disposal.</li>
<li>Assist with receiving and storing food deliveries, checking for freshness and quality.</li>
<li>Follow food safety and hygiene regulations, ensuring a clean and safe work environment.</li>
</ul><ul><li>Report any maintenance or repair issues to the appropriate personnel.</li>
</ul><ul><li>Adhere to all safety procedures and guidelines, including the use of protective equipment.</li>
</ul><ul><li>Returns all clean china, glass, and silver to its proper storage location using care to minimize breakage.</li>
<li>Following guidelines for chemical handling and sanitation standards.</li>
<li>Knowledge of proper safe handling techniques for all chemicals used.</li>
<li>Cleans and organizes all designated areas to include sweeping, mopping, and washing floors.</li>
<li>Support any position in the Kitchen that needs help.</li>
<li>Operates and maintains cleaning equipment and tools, including the dish washing machine, hand wash stations pot-scrubbing station, and trash compactor.</li>
<li>Washes and disinfects kitchen and storeroom areas, tables, tools, knives, and equipment.</li>
<li>Receives deliveries, stores perishables properly, and rotates stock.</li>
<li>Inspects, pulls, and stacks cleaned items, sends soiled items back for re-scrubbing and re-washing.</li>

Kitchen Steward

<div><p>The Commi 1 chef is responsible for preparing all food items, based on standardized recipes, for the Restaurants, Room Service, team members Cafeteria and Banquets, while maintaining the highest standards to produce an appealing and appetizing product. He/she is also responsible for ensuring the cleanliness, sanitation and safety in the kitchen and work areas while minimizing waste and maximizing cost/production ratio.</p><p></p><p><b>
Main tasks</b></p><p></p><ul><li><b>Food Preparation</b>: Assist in preparing ingredients for cooking, including chopping vegetables, preparing meats, and measuring ingredients according to recipes and portion guidelines.</li><li><b>Cooking:</b> Cook and plate dishes in the hot kitchen section, such as grilling, frying, saut&eacute;ing, roasting, or boiling, under the guidance of senior chefs.</li><li><b>Station Management:</b> Maintain a clean, organized, and efficient workstation in the hot kitchen, ensuring all equipment (e.g., grills, ovens, stovetops) is properly used and maintained.</li><li><b>Recipe Adherence:</b> Follow recipes, presentation standards, and portion control as directed by the Chef de Partie or Head Chef.</li><li><b>Stock Management:</b> Assist in checking inventory, rotating stock, and reporting low supplies to ensure the kitchen is well-stocked.</li><li><b>Hygiene and Safety:</b> Adhere to food safety, sanitation, and hygiene standards (e.g., HACCP), including proper food storage, cleaning of workstations, and safe handling of hot kitchen equipment.</li><li><b>Team Collaboration:</b> Work closely with other kitchen staff to ensure smooth service, including assisting other sections (e.g., cold kitchen or pastry) when needed.</li><li><b>Learning and Development:</b> Learn new cooking techniques, recipes, and kitchen processes to develop culinary skills and progress within the kitchen hierarchy.</li><li>Be able to operate and maintain cleanliness of all kitchen equipment.</li><li>Maintain a &ldquo;Clean as You Go&rdquo; policy.</li><li>Assist in storage and rotation of food items according to hotel procedures.</li></ul><p>

A high school education or diploma in culinary is required. Basic computer skills and familiarity with inventory systems</p></li><li><p>
Previous Hospitality industry experiences working at Commis I Chef level in a good-quality restaurant or 5-star hotel.</p></li><li><p>
One to five years of minimum previous experience is required in a high-volume kitchen or full-service hotel.</p></li></ul></div>
