Asian Wok Chef ¦ Location: Ireland

We’re looking for full-time Asian Wok Chefs to join our friendly, dynamic team for its new culinary experience with Mama Rich.

Only relevant WOK cooking experience and spoken Cantonese will be considered for this role, as the training is delivered in Cantonese. Please ensure these requirements are clearly stated in your CV.

Role Overview

As an Asian Wok Chef, you will play a key role in defining the kitchen’s culinary identity, specialising in wok techniques and authentic Asian sauces. You will prepare and execute signature dishes with precision, maintain consistency and quality across menus, and bring authentic Asian street food flavours to the forefront. This role is ideal for someone with strong technical skills, deep knowledge of Asian cuisine, and a passion for delivering bold, authentic flavours.

Key Responsibilities:

• Lead the preparation and execution of high-quality Asian wok dishes, ensuring authentic flavours and presentation.

Candidate Requirements

• Minimum 5 years of professional experience specialising in Asian wok cooking.
• Proven expertise in Nonya, Malay, Thai, Korean, and Vietnamese street food.
• Strong background in developing and executing authentic Asian sauces.
• Fluent in English and Cantonese.
• Strong leadership, organisational, and mentoring skills.
• Ability to work effectively in a fast-paced, high-volume kitchen environment.
• Excellent knowledge of food safety, HACCP, and hygiene practices.
• Develop, refine, and execute menus inspired by Nonya, Malay, Thai, Korean, and Vietnamese street food traditions.
• Prepare, test, and perfect a wide range of traditional Asian sauces central to our brand identity.
• Train, mentor, and supervise kitchen staff, fostering a culture of excellence and collaboration.
• Maintain consistency in portioning, cooking standards, and presentation across all dishes.
• Manage stock levels, ordering, and ingredient rotation with efficiency to minimize waste.
• Ensure strict compliance with HACCP and food hygiene regulations at all times.
• Collaborate with management to design and roll out seasonal menus, specials, and promotions.
• Valid passport.
• Availability to relocate to Ireland.
