Assistant Food & Beverage Manager in charge of F&B — Fast-Track to F&B Manager (6-Month Probation)

About the role
Be the operational heartbeat of our hotel’s F&B division, spanning a Lobby Café (Starbucks®), 120-seat All-Day Dining, Rooftop Pool Bar, 24-hour Room Service, a specialty restaurant (for special events), two meeting rooms (up to 100 guests combined), and a growing Outside Catering operation supported by a chiller van, full catering equipment, and dedicated storage. You will drive daily excellence, elevate revenue, and develop people—positioning yourself to step into the F&B Manager role after probation.
What you’ll do
- Operational Leadership: Run opening/closing, briefings, floor supervision, buffet/live-station quality, café speed-of-service, IRD ticket times & tray pick-ups, pool bar compliance, and event/meeting room set-ups.
- Commercial Performance: Build outlet forecasts; track RevPASH, covers, average check; lead promotions and cross-selling (rooms/meetings/outside catering).
- Menu Engineering: Partner with the Executive Chef on recipe costing, contribution margins, menu mix (Stars/Plowhorses/Puzzles/Dogs), pricing, and portion control across restaurant, café, IRD, and bar.
- Budgeting & Controls: Manage P&L drivers; maintain food & beverage cost %, labor %, waste %, and inventory integrity; lead month-end stocktakes and variance action plans.
- Alcohol Handling: Enforce license and responsible service standards; oversee beverage pars, yield and variance control, cellar/beer systems, and bar SOPs (including IRD alcohol delivery protocols).
- Outside Catering: Convert leads with Sales, plan logistics (load lists, routing, HSE), and execute off-site events to brand standard.
- People & Training: Recruit, roster, coach, and certify a multicultural team; deliver weekly micro-trainings (service, coffee standards, allergy awareness, complaint recovery).
- Hygiene & Safety: Own HACCP/food safety logs, temperature controls, cleaning schedules, and audit readiness across all venues.
Fast-Track Promotion Plan (6 months)
You will receive a clear probation scorecard in Month 1 and meet with the GM, DOF, and HR at 90 and 180 days. Promotion to F&B Manager is contingent on meeting agreed KPIs, typically including:
- Financial: Forecast accuracy, RevPASH growth, food & beverage cost within target, inventory variance within tolerance.
- Guest: Outlet/IRD satisfaction targets, complaint closure time, online review improvements.
- Quality & Safety: Internal/third-party audit scores; zero critical non-conformities.
- People: Training completion, certification compliance, engagement and turnover metrics.
- Growth: Demonstrated wins in café throughput, IRD ticket times, and outside-catering revenue.
What you’ll bring
- 3–5 years of progressive hotel F&B leadership (multi-outlet exposure preferred).
- Proven budgeting/forecasting, menu engineering, and alcohol handling competence.
- Solid buffet operations, café/bar oversight, and 24H room-service management.
- Systems literacy: POS (e.g., Micros/Simphony), inventory (e.g., Adaco/MC), Excel.
- HACCP/food safety knowledge; Responsible Service (e.g., TIPS) and/or WSET 2+ preferred; ADAFSA PIC certification (or willingness to obtain) is an advantage.
- Confident communicator; calm under pressure; coaches diverse teams to high performance.
