POSITION SUMMARY:
We are seeking a skilled and motivated Experienced Bread Baker to join our team. This role is ideal for someone passionate about naturally leavened breads, fermentation, and working with freshly milled flour in a high-volume environment. You will be responsible for all aspects of bread production, from mixing and shaping to baking and quality control. Experience with laminated pastries and a willingness to support the pastry team is a must.
Key Responsibilities:
- Mix, divide, shape, and bake a variety of artisan breads (sourdough, yeasted loaves, baguettes, rolls, etc.).
- Operate and maintain bakery equipment (mixers, deck ovens, loaders, proofers, mills).
- Monitor fermentation and proofing to ensure consistent product quality.
- Adhere to established formulas, production schedules, and scaling procedures.
- Maintain high standards of cleanliness, organization, and food safety.
- Communicate effectively with the production team, pastry team, and management.
- Assist with milling operations and flour handling when needed.
- Support pastry production during peak times or staff shortages (laminated doughs, morning pastries, etc.).
- Help train and mentor junior bakers and apprentices.
Qualifications:
- 2+ years of professional artisan bread baking experience (preferably in a wholesale or high-volume environment).
- Strong knowledge of sourdough fermentation, mixing techniques, and oven management.
- Familiarity with working with freshly milled flours and heritage grains a plus.
- Ability to lift 50+ lbs and work in a physically demanding environment.
- Flexible schedule availability (early mornings, weekends, holidays as needed).
- Attention to detail, consistency, and cleanliness.
- Team player with a positive attitude and strong work ethic.
- Experience in pastry and laminated doughs.
- Degree from a post-secondary culinary arts training program is desirable.
- ServSafe or other food safety management certification preferred.
- Knowledge of foodstuffs and food safety is essential.
- Good math skills helpful.
- Ability to read, count, and write to accurately complete all documentation, including weights and measurements.
- Ability to communicate and understand directions and instructions in English (written and verbal), including basic cooking directions and recipes.
- Knowledge of the use of kitchen utensils, tools and equipment, including knife safety and working skills (cutting, chopping, slicing, etc.).
- Manual dexterity is essential. Must possess finger dexterity to use utensils, knives and equipment adeptly.
- Frequently required to taste and/or smell food being prepared utilizing sanitary means.
- Subject to wet or slippery floors, temperature extremes/frequent changes in temperature, and excessive noise. Able to work in hot temperatures and freezer/cooler areas for extended periods of time.
- Must be able to stand for long periods of time, bend, stoop, reach, crouch, kneel, lift, push and pull. Properly lift up to 50- 75 pounds; push, pull or move items weighing up to 100 pounds.
- Ability to work varied hours/days in a fast-paced environment in accordance with restaurant operations and adhere to the attendance requirements of the restaurant/ production kitchen.
- Must adhere to the established appearance, hygiene, and uniform guidelines.
- Ability to adhere to and comply with all rules and regulations of the company, including in particular the rules for safe handling of food.
