The Fold Bakehouse is a new, premium artisan bakery concept based in Al Ain. We specialize in high-hydration sourdough breads and modern, flaky viennoiserie. We operate as an online-first bakery, focusing strictly on high-quality production for our local community. As a startup, we are a small, agile team where every member plays a crucial role in our growth.
The Role:
We are looking for a passionate Artisan Baker who is not just a machine, but a creative partner. You will execute our core menu while also having the freedom to develop new flavors and seasonal items. You must be adaptable, energetic, and ready to wear multiple hats in a fast-paced environment.
Key Responsibilities:
- Production & consistency: Execute our daily menu of sourdough loaves and laminated pastries (croissants, babkas, danishes) to a high standard.
- Creative Menu Development: We want your ideas! You will collaborate with the team to test and create new seasonal menus, exciting flavor combinations, and "Instagram-worthy" specials.
- Sourdough Management: Daily maintenance of the levain/starter to ensure peak activity and flavor.
- "All Hands on Deck" Attitude: As a small startup, we all pitch in. You should be willing to assist with tasks outside strictly baking when needed, such as packaging orders, managing inventory, or helping with logistics during busy rushes.
- Kitchen Standards: Maintain a clean, organized, and efficient workspace.
Requirements:
- Experience: Minimum 2–3 years in an artisan bakery or pastry section.
- Flexibility: You understand the startup culture—things change fast, and you are happy to adapt and support the business wherever needed.
- Creativity: A strong portfolio showing you can dream up and execute modern, visually stunning pastries.
- Technical Skill: Strong understanding of fermentation and lamination (experience with hybrid yeast/sourdough methods is a plus).
- Location: Currently in UAE (preferred) or willing to relocate to Al Ain.
