Job Title: line cook Baker
Location: Dubai
Reports to: Head bakery Chef

Position Summary
We are seeking an experienced Baker with specialized skills in crafting authentic French croissants. The ideal candidate will have in-depth knowledge of lamination, proofing, and baking techniques specific to croissants and other viennoiseries. As part of our bakery team, you will ensure the consistent production of high-quality, buttery, and perfectly layered croissants, along with other French baked goods.

Responsibilities

  • Croissant Production
  • Prepare, fold, and shape croissant dough to achieve the signature flaky layers and golden finish.
  • Maintain precise control over lamination and proofing processes for optimal texture and rise.
  • Produce a variety of croissants (plain, almond, chocolate, etc.) and ensure each meets bakery quality standards.
  • Bread Production and Baking
  • Prepare and bake additional French breads such as pain au chocolat, pain aux raisins, baguettes, and brioche.
  • Consistently follow authentic recipes to ensure product quality and flavor.
  • Quality Control
  • Inspect baked items to ensure consistent texture, taste, and appearance.
  • Adjust baking times and temperatures as needed to maintain quality.
  • Inventory and Stock Management
  • Manage inventory for croissant production ingredients, ensuring fresh, high-quality supplies are always available.
  • Minimize waste by using ingredients efficiently and according to production demand.
  • Cleanliness and Safety
  • Follow food safety guidelines for the preparation, handling, and storage of ingredients.
  • Clean and maintain the baking workspace and equipment to meet health and safety regulations.
  • Collaboration and Teamwork
  • Work closely with the Head Pastry Chef and team to fulfill daily production requirements.
  • Communicate with team members to ensure that production schedules and customer demands are met.

Requirements

  • Experience: Minimum of 2 years specializing in croissant or viennoiserie production in a professional bakery.
  • Skills: Mastery of lamination techniques, dough handling, and proofing specific to croissants.
  • Qualities: Detail-oriented, organized, and dedicated to achieving the perfect texture and flavor in each pastry.

Preferred Qualifications

  • Diploma in baking or culinary arts, with a focus on French patisserie.
  • Familiarity with various French pastries beyond croissants.

Work Environment

  • Full-time position with early morning or overnight shifts.
