Overview

Dry Diggings Distillery has been producing a wide range of spirits and educating guests on what goes into our bottles—and why that matters. Hills is the next chapter: a cocktail bar and dining room where those bottles come to life.

Position Overview

This is not a typical bartending role.

At Hills, our bartenders operate within a bartender-server model and are expected to deliver hospitality throughout the entire guest experience. While you'll spend time behind the bar crafting cocktails and leading tastings, you'll also take tables, deliver food and beverages, maintain guest areas, and ensure every guest receives attentive, knowledgeable service.

Our bartenders are ambassadors for the brand. Every member of the team is expected to develop a working knowledge of our spirits, production methods, cocktail program, and company story. You'll recommend bottle for tastings, answer questions, and help guests understand what makes our products unique.

Success in this role comes from equal parts hospitality, product knowledge, and attention to detail.

Responsibilities

  • Prepare and serve cocktails, beer, wine, coffee, and non-alcoholic beverages
  • Lead spirit tastings and educate guests on our products
  • Recommend cocktails, bottles, and menu items based on guest preferences
  • Provide full-service hospitality throughout the restaurant and bar
  • Accurately process transactions through our POS system
  • Maintain a clean, organized, and fully stocked workspace
  • Follow all food safety, alcohol service, and sanitation standards
  • Assist with private events and special functions as needed
  • Work collaboratively with front-of-house, kitchen, and distillery teams

Qualifications

  • Must be 21 years of age or older
  • Current California RBS Certification
  • Current California Food Handler Card
  • Minimum two years of bartending experience
  • Strong communication and guest service skills
  • Comfortable learning and speaking about spirits, cocktails, and production methods
  • Able to work in both high-volume and hospitality-focused service environments
  • Reliable, professional, and team-oriented

What We're Looking For

We're looking for curious, personable professionals who genuinely enjoy hospitality.

Prior spirit knowledge is appreciated, but a willingness to learn is essential. Every bartender is expected to confidently speak about our products, production process, and cocktail program. If learning about spirits and sharing that knowledge with guests doesn't excite you, this likely isn't the right fit.

If you're looking for a role where hospitality, education, and craft spirits matter, we'd love to meet you.
