Position Title: CDP/DCDP– Sushi
Department: Culinary
Reporting To: Sous Chef / Head Chef
Location: 3fils Restaurant

Position Summary:

The CDP/DCDP – Sushi is responsible for preparing high-quality sushi dishes in accordance with established recipes and presentation standards. The role ensures adherence to food safety, hygiene, and quality standards while supporting the Sushi Chef and culinary team in daily operations.

Key Responsibilities:

  • Prepare and execute sushi items including nigiri, sashimi, maki, and other Japanese dishes as per standard recipes.
  • Ensure mise en place is complete and stations are properly stocked before and during service.
  • Maintain proper portion control, cutting techniques, and plating consistency.
  • Follow HACCP and company hygiene standards; maintain cleanliness and order in the sushi preparation area.
  • Monitor freshness and quality of ingredients; ensure proper storage and rotation.
  • Assist with receiving and storing deliveries; report spoilage or stock issues.
  • Support Chef de Partie and Sous Chef in daily kitchen operations and training of junior team members.
  • Uphold brand standards for food quality, speed, and guest satisfaction.

Qualifications:

  • Minimum 2 years of experience in sushi preparation within a high-volume or fine dining setting.
  • Knowledge of Japanese cuisine, ingredients, and knife handling techniques.
  • Certification in Food Safety/HACCP preferred.
  • Ability to work in a fast-paced environment with attention to detail.
  • Team player with a proactive and positive attitude.
  • Flexible to work shifts, weekends, and public holidays.
