Position Overview:
We are seeking a highly skilled and meticulous Chef de Partie to lead our Butchery section. This is a crucial leadership role for a culinary professional with expert butchery knowledge, particularly in lamb, beef, and chicken preparation for Lebanese cuisine. You will be responsible for managing the entire butchery station, ensuring the highest standards of quality, consistency, and efficiency, while training and supervising commis chefs. Your craftsmanship will directly impact the authenticity and excellence of our menu.
Key Responsibilities:
Section Leadership & Operations:
· Take full ownership of the butchery section (the "Butchery Partie"), ensuring seamless daily operations.
· Supervise, train, and mentor Commis Chefs and Butchers within the section, delegating tasks effectively.
· Ensure all meat preparation meets the precise specifications and quality standards set by the Head Chef.
· Maintain clear communication with the Head Chef, Sous Chef, and other sections (e.g., Grill, Cold Kitchen) to ensure timely preparation and supply.
Advanced Butchery & Preparation:
· Perform expert-level butchery: breaking down whole carcasses and primal cuts into sub-primal and specialized cuts for Lebanese dishes.
· Master the preparation of all specialty items, including:
o Shawarma: Expertly preparing, trimming, and stacking the meat layers for the vertical spit.
o Kebabs: Cutting uniform cubes of meat for skewers.
o Kafta: Overseeing the grinding, seasoning, and shaping of minced meat mixtures.
o Meshwi: Preparing whole cuts and offal for traditional grilling.
· Develop and standardize cutting techniques to maximize yield, minimize waste, and ensure consistency.
Quality, Safety & Inventory:
· Conduct daily inspections of all meat deliveries for quality, freshness, and specification.
· Implement and uphold stringent HACCP and food safety protocols, ensuring the butchery area meets the highest standards of hygiene.
· Manage butchery inventory, including proper labeling, dating, rotation, and storage of all products.
· Assist the Head Chef in controlling food costs through accurate yield management and waste reduction.
Qualifications & Required Skills:
· Proven experience as a Chef de Partie or a senior Butcher in a high-volume, quality-focused restaurant, preferably within Middle Eastern or Lebanese cuisine.
· Expert knowledge of butchery for lamb, beef, and chicken, with a deep understanding of cuts and techniques specific to Arabic cuisine.
· Demonstrated ability to lead and develop a small team.
· Exceptional knowledge of food safety, sanitation, and butchery equipment maintenance.
· Physical stamina to stand for long periods and lift heavy items (up to 25-30 kg).
· Strong organizational, communication, and problem-solving skills.
· A passion for quality, precision, and the culinary traditions of Lebanon.
· Relevant culinary certification or equivalent experience is required.
