Flour Country (Bakery Production Unit of Grandiose) is looking for Chef de Partie (Arabic Sweets) in their Food Production Unit located at DIC, Dubai

Job Purpose:

The Chef de Partie – Arabic Sweets is responsible for the preparation, production, and quality control of traditional Arabic sweets in a high-volume bakery production environment. The role ensures consistency, hygiene, efficiency, and adherence to company standards while meeting daily production targets.

Key Responsibilities:

Production & Operations

■ Prepare and produce a wide range of Arabic sweets such as Baklava, Kunafa, Basbousa, Maamoul, Qatayef, Halawet El Jibn, Ghraybeh, and related items.

■ Execute production according to standard recipes, portion sizes, and yield requirements.

■ Ensure timely completion of daily production schedules as per factory demand and dispatch timelines.

■ Monitor baking, frying, soaking (syrup), and finishing processes to maintain consistency and taste.

Quality Control

■ Maintain high standards of taste, texture, appearance, and freshness of all products.

■ Conduct regular checks on raw materials and finished goods.

■ Ensure compliance with HACCP, Dubai Municipality Food Safety regulations, and internal quality standards.

Hygiene & Food Safety

■ Follow strict food safety, sanitation, and personal hygiene standards at all times.

■ Ensure correct storage, labeling, FIFO/FEFO practices, and temperature control of ingredients and finished products.

■ Maintain cleanliness of workstations, equipment, and production areas.

Team Coordination

■ Supervise and guide Commis Chefs, Bakery Assistants, and Helpers assigned to the Arabic sweets section.

■ Train junior staff on traditional recipes, production techniques, and safety procedures.

■ Coordinate with other sections to ensure smooth production flow.

Inventory & Cost Control

■ Assist in monitoring raw material usage, wastage, and stock levels.

■ Report shortages, quality issues, or equipment malfunctions to the Production Manager.

■ Support cost control initiatives by minimizing wastage and rework.

Required Skills and Qualifications:

  • Diploma or certification in Pastry, Bakery, or Culinary Arts preferred.
  • Minimum 3–5 years of hands-on experience in Arabic sweets production, preferably in a bakery factory or large-scale production unit.
  • Strong knowledge of traditional Arabic desserts and regional variations.
  • Experience working in UAE or GCC food production environment is an advantage.
  • Knowledge of food safety regulations (HACCP, ISO standards).
  • Ability to lead, supervise, and train junior staff.
  • Good communication and organizational skills.
  • Flexibility to work in shifts and meet tight production deadlines

Job Type: Full-time

Pay: AED5,000.00 - AED8,000.00 per month
