Job Summary
Kashkan Restaurant by Ranveer Brar is looking for a skilled and organized Pantry Chef (Garde Manger) to manage the cold kitchen and pantry section. The ideal candidate will be responsible for preparing salads, cold appetizers, condiments, and accompaniments that align with Kashkan’s modern Indian culinary philosophy, ensuring quality, freshness, and presentation at all times.
Key Responsibilities
- Prepare and present salads, cold starters, raitas, chutneys, dips, and accompaniments as per Kashkan’s menu standards.
- Manage daily operations of the pantry/cold kitchen section, including mise en place and service.
- Ensure consistency in taste, texture, and presentation of all pantry items.
- Coordinate with the Head Chef and hot kitchen team for smooth kitchen operations.
- Maintain high standards of hygiene, sanitation, and food safety.
- Monitor inventory levels, control food wastage, and assist with ordering pantry supplies.
- Handle proper storage, labeling, and rotation of pantry ingredients (FIFO).
- Assist in menu development and seasonal specials related to cold dishes and accompaniments.
- Train and supervise commis chefs or junior kitchen staff assigned to the pantry section.
- Ensure cleanliness and proper maintenance of pantry equipment and workstations.
Required Skills & Qualifications
- Previous experience as a Pantry Chef / Garde Manger in a restaurant or hotel kitchen.
- Strong knowledge of cold kitchen techniques, salads, dressings, and plating.
- Understanding of Indian flavors and accompaniments with a modern presentation approach.
- Knowledge of food safety, hygiene, and kitchen best practices.
- Ability to work efficiently in a fast-paced restaurant environment.
- Good communication, teamwork, and time-management skills.
- Culinary qualification or relevant kitchen training is preferred.
