Commi II (COLD ONLY)

The Commis II – Cold Kitchen is responsible for assisting in the preparation, presentation, and storage of all cold food items, ensuring consistency, quality, and hygiene standards are met. This role supports the Cold Kitchen team in day-to-day operations and contributes to maintaining a smooth workflow.

Key Responsibilities

Food Preparation & Production

• Prepare cold dishes such as salads, sandwiches, canapés, cold appetizers, and dressings according to recipes and standards.
• Assist in mise-en-place and ensure all ingredients and tools are ready before service.
• Follow portion control guidelines to avoid wastage.
• Maintain consistency in taste, presentation, and quality of all cold kitchen items.

Hygiene & Safety

• Ensure proper labeling, storage, and rotation of food using FIFO method.
• Maintain cleanliness and sanitization of workstations at all times.
• Comply with food safety standards (HACCP) and personal hygiene guidelines.
• Report any food safety hazards or equipment issues to the Chef de Partie immediately.

Operational Support

• Assist senior chefs in daily tasks and follow instructions accurately.
• Support banquet and event preparation as required.
• Ensure adequate stock levels and inform the supervisor of shortages.
• Contribute to controlling food waste and maintaining cost efficiency.

Teamwork

• Work closely with the Cold Kitchen team to ensure smooth service.
• Maintain positive and professional relationships with colleagues and other departments.
• Participate in training and development sessions as directed by management.

Skills & Qualifications

• Previous experience in a cold kitchen or similar culinary role preferred.
• Basic knowledge of cold food preparation techniques.
• Ability to work in a fast-paced environment.
• Strong attention to detail in presentation and hygiene.
• Good communication and teamwork skills.
• Flexibility to work various shifts including weekends and holidays.

Physical Requirements

• Ability to stand for long periods.
• Ability to lift up to 15 kg when needed.

Job Type: Full-time

Pay: AED1,400.00 - AED1,500.00 per month
