The Commi-1 (Tandoor) is responsible for preparing and cooking a variety of authentic Indian tandoor dishes including breads, kebabs, grills, and accompaniments. He/She supports the senior chefs in maintaining quality, taste, and consistency while supervising junior commis in the tandoor section.

Key Responsibilities:

  • Prepare and cook a variety of tandoor items such as kebabs, naan, roti, kulcha, tandoori chicken, and grilled specialties.
  • Ensure all preparations meet the company’s quality and presentation standards.
  • Manage mise-en-place for the tandoor section during service.
  • Supervise and guide Commi-2 and Commi-3 in tandoor preparation.
  • Maintain proper temperature, operation, and cleanliness of tandoor ovens.
  • Follow standard recipes and ensure portion and cost control.
  • Monitor food hygiene and safety standards as per HACCP.
  • Assist in menu planning and developing new tandoor items.
  • Minimize wastage and optimize usage of ingredients.
  • Coordinate with Indian curry section to ensure smooth service.

Skills & Requirements:

  • Strong knowledge of tandoor cooking techniques and Indian breads.
  • Ability to handle the tandoor section independently.
  • Good leadership skills to supervise junior commis.
  • Time management and ability to work under pressure.
  • Knowledge of food hygiene and kitchen safety standards.

Qualification & Experience:

  • 2–4 years of experience in a professional Indian kitchen with expertise in tandoor.

Job Type: Full-time

Pay: Up to ₹25,000.00 per month
