Job Summary:
A Commis is a junior staff position responsible for assisting senior chefs with basic food preparation tasks, maintaining hygiene and safety standards, and ensuring the kitchen runs smoothly. This role provides essential support in the kitchen and is a stepping stone for advancing to higher-level positions.
Key Responsibilities:
1. Food Preparation: Assist in basic food preparation tasks such as chopping, cutting, peeling, and cleaning ingredients. Help in preparing sauces, stocks, and garnishes.
2. Cooking Assistance: Work under the supervision of the Chef de Partie and other senior chefs to cook simple dishes, such as appetizers, side dishes, and salads, following standardized recipes.
3. Plating: Assist in plating food attractively before it is served to guests, ensuring portion control and presentation meet standards.
4. Kitchen Hygiene: Maintain cleanliness and hygiene in the kitchen by cleaning surfaces, washing utensils, and ensuring that food is stored correctly and at appropriate temperatures.
5. Stock Management: Assist with inventory management by organizing and stocking ingredients, keeping track of food supplies, and reporting any shortages.
6. Health & Safety Compliance: Adhere to food safety regulations, including the proper use of knives and kitchen equipment, and ensure safe handling of raw and cooked food.
Team Support: Work effectively with the kitchen brigade, offering support to senior chefs, and performing additional tasks as needed.
