We are looking for a detail-oriented and analytical Cost Controller or Assistant Cost Controller to support the Finance and F&B teams in managing food and beverage costs, inventory control, reporting, and compliance with internal procedures.
The role will be responsible for monitoring cost efficiency across venues, ensuring accurate reporting, maintaining strong internal controls, and supporting operational departments with cost analysis and forecasting.
RESPONSIBILITIES:
Cost Control & Reporting
- Prepare daily flash food cost by outlet.
- Prepare and reconcile Food Cost Reports and Beverage Cost Reports.
- Maintain daily and monthly records of food and beverage costs, potential sales, and actual sales.
- Prepare monthly reports including:
- Beverage Cost Summary
- Discount and Package Allocation
- Staff Meals Tracking
- Sponsorship Tracking
- OS&E Monthly Reports
- GL Operating Expense Listings
- Compile and distribute month-end reporting packs.
- Prepare menu recipe costing and update item cost and selling prices.
- Conduct weekly analysis of brunch packages vs cost and advise venue GMs.
Inventory & Stock Control
- Perform monthly inventory in stores and outlets (beverage, tobacco, OS&E).
- Post and verify inventory in ERP system.
- Conduct spot checks on receiving, bars, meat portioning, and high-value items.
- Run yield tests, butcher tests, and portion control checks.
- Ensure proper storage practices and security controls.
- Monitor requisition processes to ensure compliance with cost control procedures.
Bar & Beverage Controls
- Prepare and reconcile bar reports (sales, requisitions, transfers, closing inventory).
- Track full bottle sales and entertainment checks.
- Post beverage breakage and spoilage reports.
- Conduct alcohol test checks in main bars.
- Establish potential cost for bars and outlets.
Systems & Administration
- Perform approved updates in Micros system.
- Verify accuracy of Storekeeper’s Daily Reports.
- Ensure ERP uploads are checked and approved before posting.
- Monitor Future Log to ERP data transfers.
- Verify invoices, Goods Received without Invoice forms, and Error Correction Notices.
- Maintain accurate documentation and safeguard confidential information.
Operational Support
- Work closely with Executive Chef and Outlet Managers to:
- Establish standard portion sizes.
- Monitor production plans.
- Control usage of leftover and salvage items.
- Provide cost insights for pricing decisions.
- Assist in forecasting cover counts for purchasing and staffing planning.
- Provide analysis to management highlighting cost issues and improvement opportunities.
Compliance & Professional Standards
- Ensure adherence to company policies, safety procedures, and internal controls.
- Maintain high standards of professionalism, punctuality, and appearance.
- Support department discipline and teamwork.
- Relieve other Cost Controllers during leave periods (if applicable).
- Perform additional duties as assigned.
QUALIFICATIONS:
- Degree in Finance, Accounting, or related field.
- 2–3 years of experience in Cost Control (F&B/hospitality background preferred).
- Working knowledge of Excel.
- Experience with Future Log, Micros, or ERP systems preferred.
- Strong analytical skills and attention to detail.
- Ability to communicate effectively with all levels of management.
- High level of integrity and confidentiality.
