The Demi Chef de Partie assists the Chef de Partie and Sous Chef in preparing and cooking high-quality Arabic dishes, particularly Mandi and other traditional Middle Eastern cuisines. The role involves ensuring consistency in food preparation, maintaining hygiene standards, and supporting smooth kitchen operations.
Key Responsibilities:
- Assist in the preparation, cooking, and presentation of Mandi and other traditional Arabic dishes.
- Ensure all food items are prepared according to company recipes and quality standards.
- Monitor portion and waste control to maintain food cost.
- Maintain cleanliness and organization of the workstation and kitchen areas.
- Ensure all equipment and utensils are properly cleaned, maintained, and stored.
- Support the Chef de Partie in daily operations, mise en place, and stock rotation.
- Follow proper food safety, hygiene, and sanitation procedures as per UAE municipality standards.
- Receive and store deliveries while checking for quality and quantity.
- Assist in training commis and kitchen helpers when required.
- Report any maintenance issues or shortages to the Sous Chef promptly.
- Maintain a positive and professional approach with colleagues and customers.
Requirements:
- Minimum 2–3 years of experience in a similar role, preferably in an Arabic or Mandi restaurant.
- Strong knowledge of Arabic cuisine, especially Mandi preparation (rice, meat marination, and traditional cooking techniques).
- Good understanding of kitchen operations, hygiene, and safety standards.
- Ability to work under pressure and as part of a team.
- Basic communication skills in English; Arabic knowledge is an advantage.
- Flexibility to work in shifts, weekends, and holidays as per operational needs.
