Job Summary
Wowee Zowee is a group of very motivated and inspired grinders looking to make the best pizza this side of the Santa Ana river. We are looking for a skilled and seasoned sourdough maker, someone looking to grow long term with the team we are building here. We produce 105 lbs per day. Our dough is made at 80% hydration with exquisite flour. We are looking for someone with experience and an appreciation for the art of dough making. Duties
- Mix and knead dough using traditional techniques and modern equipment to achieve the desired consistency and texture.
- Measure ingredients accurately, following recipes and menu specifications to ensure consistent quality.
- Monitor dough fermentation processes, adjusting timing and conditions as needed for optimal results.
- Maintain cleanliness and organization of the dough preparation area, adhering to food safety standards.
- Assist with menu planning by providing input on dough types and flavor variations for different pizza offerings.
- Support the kitchen team during busy hours by preparing additional ingredients related to dough production.
- Follow all health regulations related to food handling, storage, and sanitation practices.
Experience
- Prior experience in food preparation or bakery settings is highly desirable.
- Knowledge of culinary techniques related to dough making, including kneading, proofing, and baking.
- Familiarity with food safety standards within the food industry or restaurant environment.
- Experience working in fine dining or catering environments is a plus.
- Strong knife skills and familiarity with kitchen equipment used in dough preparation.
- Background in menu planning or working within a food service operation that emphasizes quality ingredients.
