A Food & Beverage (F&B) Controller monitors, analyzes, and manages all food and beverage costs to maximize profitability. Key responsibilities include tracking inventory levels, conducting audits, reconciling records, and ensuring accurate financial reporting. They also collaborate with kitchen/bar staff to forecast demand, prevent waste, and maintain, or adjust, menu pricing for optimal efficiency.
Key Responsibilities
- Inventory & Cost Control: Perform regular, detailed physical inventory checks, audits, and reconciliations of food and beverage items.
- Financial Reporting: Analyze F&B costs, prepare daily/monthly reports, and calculate profit/loss on items sold.
- Menu Engineering: Update and maintain accurate menu costing to ensure profitability.
- Operational Oversight: Control inventory levels to prevent waste and pilferage.
- System Maintenance: Monitor POS systems for voids, discounts, and complimentary sales.
- Purchasing & Purchasing: Collaborate with suppliers to manage procurement and, in some cases, verify orders against invoices
Qualifications & Skills
- Experience: Previous experience in cost control, accounting, or food and beverage management within the hospitality industry.
- Education: Bachelor’s degree in Finance, Accounting, or Hotel Management.
- Technical Skills: Proficiency in Excel and specialized POS/inventory systems (e.g., FMC).
- Attributes: Strong analytical, numerical, and organizational skills.
