SUMMARY:
Under the supervision of the Director of Purchasing, the incumbent purchases materials and/or services for Food and Beverage areas of the casino in accordance with Purchasing Department procedures and Casino internal controls.
MINIMUM QUALIFICATIONS:
- 5+ years food related purchasing experience or equivalent combination of education and experience (required).

A valid Driver’s license (required).

Prior F&B Management experience (preferred).

Possess mathematical skills and ability to cost and account for food product purchases.

Strong negotiation and contract management skills.

Knowledge of the supply chain process (i.e. purchasing).

Project management skills.
- Excellent written and oral communication skills.
- Detail-oriented and proficient computer skills.

Should possess strong organization and follow-up skills.
EDUCATION:

High School Diploma or GED (required).

Undergraduate degree in Culinary or Business (Purchasing emphasis) from an accredited college or university (preferred).
LICENSE REQUIREMENTS:

Must be able to successfully pass a pre-employment drug screen, background investigation, and maintain a Pauma Gaming Commission License.

Must pass and obtain a current SERV Safe Food Handler’s Certification.
ESSENTIAL SKILLS, DUTIES & RESPONSIBILITIES:

Purchases food and beverage related products in proper quantities which maximizes service levels and inventory turns.

Negotiates the best prices, programs, and promotions.
-
Performs constant tracking necessary to maintain updates and zero tolerance pricing errors.

Evaluates competitive suppliers, products, prices, programs and presents comparisons to management.

Reviews logistics programs and freight for accuracy.
-
Participates in trade shows and mini shows as needed to improve business.

Review and research opportunities to reduce “overall costs” through new vendors or negotiations with current vendors. The term “overall costs” takes into consideration many non-monetary considerations to include timeliness of delivery, quality, reliability, and related factors.

Wherever possible, consolidates purchases to take advantage of any quantity discounts available.

Maintains adequate vendor information files, and when necessary, acquires vendors W-9’s and Routing information required for regulatory or tax purposes.

Reviews requisitions.

Works with vendors to obtain product and service information needed such as price, availability, and delivery schedule.

Selects products for purchase by testing, observing, or examining items.
-
Estimates values according to knowledge of market price.
-
Determines method of procurement such as direct purchase, spec specific or bid.

Prepare purchase orders or bid requests.
-
Reviews bid proposals and negotiate contracts within budgetary limitations and scope of authority.

Maintains procurement records such as purchased costs, delivery, product quality or performance, and inventories.

Discuss defective or unacceptable goods or services with inspection or quality control personnel, users, vendors, and others to determine source of trouble and take corrective action.

Expedite delivery of goods to users.
-
Facilitate deliveries to correct storage locations.
-
Organize storerooms, walk-ins and storage areas.
-
Completes special projects as assigned.
WORKING CONDITIONS, PHYSICAL/MENTAL REQUIREMENTS:

Ability to lift 30 pounds frequently, 50 pounds occasionally.
