Job Summary And Qualifications

POSITION SUMMARY:

Planning, cooking, preparing foods for service to all customers, including but not limited to all patients and customers of the facility and cafeteria service. To provide quality customer service to patients by accurately assembling patient trays according to orders and delivering trays according to departments. To maintain a clean kitchen and handle food items according to HAACP procedures. Performs a variety of food service and dish room tasks. Completes assembly of meal service items. Cleans and removes dirty food from floors and cleans carts and dishware utilizing dish machine. Cleans and sanitizes work area. Performs a variety of cleaning and dish room duties, sweeps, and mops floors. Checks in and puts away stock. Buses tables in the atrium area. Participates in providing patient specific care standards as directed, and follows service excellence standards to ensure high levels of patient satisfaction.

ESSENTIAL JOB RESPONSIBILITIES:

  • The Food Service Associate II may be assigned any of the following areas of responsibility: Host/Hostess, Tray line, Porter, Pots and Pans/Dish Room.
  • Must know policies and procedures for HACCP standards, familiar with area appropriate HACCP logs and demonstrates how to document information on HACCP logs and take corrective action if problem is identified.
  • Demonstrates knowledge of safe food handling and proper temperature ranges.
  • Demonstrating positive customer service to all customers.
  • Interacts with fellow workers in a way that promotes a harmonious and cooperative working environment.
  • Areas of responsibility may change depending on the needs of the department.
  • Complies with hospital/departmental policies and procedures, i.e., attendance, mandatory education, safety, infection control, etc.
  • Employee’s conduct must reflect the Company’s values and a commitment to the Code of Conduct ethics and compliance program.
  • Other duties as assigned.
  • Host/Hostess Responsibilities:
  • Must be able to keep all storage areas, refrigerators and freezers clean, neat, and organized.
  • Cover, label, date, food rotation (FIFO) Julian Dates, Cooked over raw, expiration dates.
  • Reports to work well groomed and in compliance with departmental dress code. Wears ID badge when on duty.
  • Maintains proper procedure for delivering tube feedings.
  • Maintains proper procedure for assembling, recording and delivering nourishments.
  • Maintains proper procedures for delivering late meals to nurse supervisor or designated refrigerator.
  • Demonstrates proper procedures for patient meal ticket handling (i.e., highlighting priorities, diabetics).
  • Demonstrates ability to read, interpret and follow patient meal orders.
  • Knowledge of procedures to store foods before, during and after the meals and to be able to maintain these foods at proper temperature (i.e., cover, label, date).
  • Capable of keeping work area clean and uncluttered at all times and ensuring that all equipment is clean.
  • Takes HACCP temperatures continuously and records data on appropriate HACCP logs.
  • Knowledge of proper procedure for handling and delivering special meal tickets such as “ready at times”, “ADA’s”, priorities and guest trays.
  • Demonstrates proper unit delivery of isolation trays by checking with nursing.
  • Demonstrates proper procedure for patient tray delivery
  • Tray line Responsibilities:
  • Reviews production sheets to determine types and quantities of salads, desserts, sandwiches, and bar items to be prepared.
  • Follows standardized recipe for production of items.
  • Checks temperatures of items as needed.
  • Completes accurately in preparing the number requested.
  • Prepares and portions desserts, salads, and sandwiches for patient meals, inclusive of needs of modifies diets.
  • Prepares desserts, salads, items for café bars, fruit bars, and specialty bar as needed.
  • Prepares sandwiches and items needed for late trays.
  • Utilize recommended garnishes for product.
  • Follows the City of Austin, Texas Department of Health, and JCAHO standards for food production, food service, and food service, and sanitation.
  • Follows temperature recommendations for service, storage, and preparation of foods.
  • Completes department documentation of food products as required.
  • Completes and follows HACCP plan and documentation in department.
  • Follows cleaning and sanitation guidelines.
  • Plans preparation schedule and service to insure that food will be ready for service at specific times for tray line. Confers with supervisors and staff regarding diet modifications and meal items as needed.
  • Follows recommended procedures of texture changes of items.
  • Completes items on timely consistently.
  • Prepares foods to the highest quality of acceptance.
  • Follows standardized and/or specific recipes to insure consistent quality of products, including portion control recommendations.
  • Assists with tray line and café line as needed and requested.
  • Maintains a clean work area during and at the end of the shift.
  • Follows the assigned cleaning schedule.
  • Maintains a clean container of sanitizer with a clean cloth, uses and rinses the cloth frequently.
  • Cleans immediate work area, coolers, floors, large equipment as needed and at end of each use.
  • Documents appropriate quality control data and temperature logs for coolers, pass through units, line service, sanitation sink and any other assigned data documentation needed with all health codes and standards.
  • Takes out trash as needed and directed.
  • When following the task list of the position working for the day, completes the activities as required in a timely manner.
  • Assists with other position tasks as able and trained.
  • Completes specific tasks as required for position.
  • Assists with training of employees as needed for department.
  • Assists with tasks as requested or directed within the trained/skilled abilities of the individual as needed as to benefit the department.

  • Follows delivery schedule for cart/try delivery
  • Delivers trays to rooms/floors in a timely manner
  • Follows department policy in assisting patient with meal service
  • Removes trays/carts from floor after each meal following time specification and policy
  • Checks the utility rooms on all floors as directed
  • Prepares snacks for patients as directed following guidelines
  • Completes the pickup of carts and trays and cleans and sanitizes per department policy
  • Breaks down the carts with efficiency
  • Cleans and sanitizes carts as per department policy
  • Cleans and sanitizes carts weekly per cleaning schedule
  • Stocks and sets up area with efficiency
  • Follows pars when stocking
  • Uses appropriate tools for stocking
  • Rotates all items as required by dates, and pulls outdated items
  • Follows policy for providing excellent customer service
  • Assists customers following NAMC Customer Service Standards
  • Follows City Austin, Texas Department of Health, and JCAHO Standards for food service sanitation
  • Follows guidelines for food service, storage and preparation
  • Follows cleaning and sanitation guidelines for use of dish machine
  • Documents temperatures of dish machine at each use
  • Reports all maintenance needs as policy states
  • Drains and shuts down dish machine as required
  • Delimes machine as weekly cleaning schedule states
  • Cleans dish room and trashcan daily, changes liners and disposes of trash to loading dock per department policy
  • Maintains hand sinks with soap, towels and clean receptacle
  • Follows procedure for utensil washing
  • Follows cross contamination policy for department
  • May assist with pot/large utensil cleaning at pot sink
  • Completes dish machine washing on any dishware in dirty dish area as needed
  • Delivers clean dishware and utensils to proper station in production area
  • Assists with unpacking and storage of food products after delivery
  • May assist with any food service setup and break down as assigned

PORTER RESPONSIBILITIES:

  • Follows City of Austin, Texas Department of health, and JCAHO standards for food storage.
  • Checks in stock as delivered and puts away in appropriate places in accordance with all health codes, standards, and department policy.
  • Completes cleaning tasks per department policy.
  • Washes pots, pans, kitchen utensils, and small wares used for food preparation and service in accordance with all health codes and standards.
  • Documents sanitizing solution per department policy.
  • Changes water in three sinks after each meal or as needed to maintain proper sanitation levels.
  • Cleans pot room including sinks, counters, shelves, and walls. Maintains clean, organized area in accordance with all health codes and standards.
  • Completes cleaning tasks throughout department as assigned.
  • Follows cleaning and sanitation guidelines.
  • Maintains department cleaning and organization.
  • Sweeps and mops the floors and cleans walls in all common areas, coolers, and freezer as assigned.
  • Cleans and sanitizes drains weekly following proper procedure.
  • Disposes of trash and waste and cleans trashcans as directed and replaces liners.
  • Busses, cleans, and sanitizes tables in the Atrium are during peak service periods as needed, directed by the Supervisor of Food Service, or the Cafeteria Supervisor.
  • Stores all cleaning tools and chemical items per department policy and standards.
  • Employee’s conduct must reflect the Company’s values and a commitment to the Code of Conduct ethics and compliance program.
  • Employee reflects SDH Service Excellence standards in every interaction.
  • Other duties as assigned.

KNOWLEDGE, SKILLS AND ABILITIES:

Must be able to demonstrate understanding of national patient safety initiatives by strict compliance to all safety protocols and procedures as required by both HCA and St. David’s Surgical Hospital.

Required: Must be able to read, write and follow written/oral instructions.

Preferred: Prior porter/utility knowledge

EDUCATION AND EXPERIENCE:

Preferred: Experience in retail or hospital food service establishment. Formal training in food service production or culinary arts. High School Diploma or GED equivalent, but not required.

LICENSES AND CERTIFICATES:

Required: Current ServSafe Food Handler Permit, Travis County Health Department Food Handler Card or State Food Safety permit within 7 days of hire date.
