Food & Beverage Manager / Sommelier Job Description


FLSA: Salary/Exempt

CLASSIFICATION: Full-time, year-round

REPORTS TO: Clubhouse Manager

SUPERVISES: Assistant Food & Beverage Managers , Servers, Server Assistants, Hosts, Captains, Bartenders


GENERAL SUMMARY:

The Food & Beverage Manager/Sommelier reports to the Clubhouse Manager and is responsible for overseeing daily food and beverage operations, including managing the department in the Clubhouse Manager’s absence. This role provides expert knowledge of wine and spirits, ensures the quality of all food and beverage offerings, and is responsible for selecting, ordering, and maintaining the wine inventory. Working collaboratively with the team, this position anticipates member needs while upholding the highest standards of service and adherence to Club Pelican Bay’s policies.


ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Be well-versed of the particular characteristics and description of every wine/champagne by the glass and major wines on the list; designated glassware & terminology.
  • Develop, maintain, and assist with staff wine education.
  • Assist in monitoring staff on proper pour levels and conduct on-going training as needed.
  • Ensure wine lists accurately reflect inventories.
  • Assist with receiving inventory and organization of inventory within the wine room and all alcohol storage areas.
  • Conducts monthly inventory of all wine, spirits and beer.
  • Distributes food and wine menus; suggests menu items, answers questions.
  • Pair and suggest wines that will best complement menu items.
  • Conduct member wine tastings.
  • Secure liquors, beers, wines, coolers, cabinets, and storage areas.
  • Creates seasonal cocktail lists for both our restaurants.
  • Maintains cleanliness and sanitation of all outlets, banquet areas and bars, ensuring safety, sanitation, energy management, preventive maintenance and other standards are consistently met.
  • Works with the Food and Beverage Managers, Executive Chef, Clubhouse Manager and Director of Events, to ensure efficient service in all of the club's outlets and for special functions.
  • Assists in the development and the implementation of the annual budgets for the Food & Beverage department. 
  • Conducts scheduled meetings with service staff including pre-meal meetings and relays pertinent information such as house count and menu changes, special member requests, etc.
  • Available on the floor during all meal periods to greet members, ensure each table has been approached for guest satisfaction and resolve any issues that may occur.
  • Monitors dining and event reservations and prepares appropriate floor plans for set-up.
  • Ensures that all side-work is accomplished and that all cleaning of equipment and storage areas is completed according to schedule.
  • Responsible for the recruitment, training and development of employees including implementing proper steps of service to maintain member satisfaction.
  • Assist in the auditing and approval of bi-weekly payroll processing.
  • Produces daily or meal-period revenue analyses and other reports from point of sale (POS) systems used in the dining room.
  • Ensures full compliance for the entire department on all HR policies and procedures including wage and hour, Federal, State, and local laws pertaining to alcoholic beverages.
  • Ensures employee performance is reviewed on an ongoing basis, and employee performance evaluations are conducted in a timely fashion across all areas of responsibility.
  • Performs daily POS closeout and tip distribution requirements (if applicable). Verifies proper distribution of tips and hours for employees and submits to Accounting/HR.
  • Provides appropriate reports concerning employee hours, schedules, pay rates, job changes, tip pools, etc.
  • Coordinates with all departments on Food & Beverage programs, including communications and marketing of dining schedules, menus, events and activities.
  • Performs other appropriate assignments and projects as required by the Clubhouse Manager.


ADDITIONAL DUTIES AND RESPONSIBILITIES:

  • Must be able to work a flexible schedule including evenings, weekends, and holidays.
  • Maintain effective employee and member relations.
  • Self-starter, friendly, and outgoing.
  • Demonstrated leadership skills and the ability to motivate and inspire a team to provide the best in class customer service.
  • Proficient computer skills including POS systems (preferably Microsoft Office Suite and ClubEssential).
  • Excellent verbal communication.
  • Must be able to work at a rapid pace while maintaining attention to detail, ability to multitask.
  • Must be able to work large or small events with minimal supervision and in a team environment.


EDUCATION AND EXPERIENCE:

  • Minimum 3 years’ management or leadership experience in a restaurant, resort, hotel or private club, required.
  • Certified Sommelier or equivalent certification, required.
  • Bachelor’s degree in hospitality or similar field, preferred.
  • Florida CMAA Club Management Certificate trainings, preferred.
  • Florida Food Managers Certificate, preferred.
  • Alcoholic beverage certification, preferred.
  • Must be 21 years of age or older.
  • Basic knowledge of Club’s POS system or comparable POS system, required.


WORKING CONDITIONS AND PHYSICAL REQUIREMENTS: The physical demands described here are representative of those that must be met by an employee to successfully perform the essential duties and responsibilities of this position.

  • Will occasionally work outdoors and may be exposed to wet and/or hot conditions.
  • Moderate noisy environment.
  • Must be able to stand and walk for up to (12) hours per day.
  • Ability to perform first aid and CPR while utilizing the emergency equipment.
  • Move or lift objects up to 50 pounds.
  • Must be able to climb, crawl, reach, stoop, kneel, crouch, crawl, push or pull.
  • Communication, to include reading, hearing, and talking with employees and members.
  • Must have close, distance, peripheral, and color vision along with the ability to adjust focus.
  • Must have a valid driver’s license.
