Job Title
Food Technologist / Scientist – Dehydrated & Instant Foods (Defence Applications)
Location: UAE
Role Summary
The Food Technologist will be responsible for research, development, optimization, and validation of dehydrated, instant, and emergency food products for armed forces and disaster-relief operations. The role focuses on rapid-rehydration foods, survival rations, and shelf-stable convenience meals suitable for extreme environments such as high altitude, cold, and field conditions with limited cooking infrastructure.
Key Responsibilities
Product Development & Research
- Develop quick-cooking dehydrated foods
- Formulate instant meal systems
- Design non-vegetarian dehydrated products
- Develop beverage and dessert powders
- Work on emergency and survival ration formulations
Processing & Technology
- Apply and optimize dehydration technologies such as:
- HTST pneumatic drying
- Freeze drying and accelerated freeze-dehydration
- Cold-shock dehydration
- Intermediate moisture food (IMF) processing
- Ensure rapid rehydration, minimal texture loss, and retention of nutritional and sensory quality.
- Scale products from lab to pilot and production levels.
Quality, Shelf Life & Packaging
- Conduct shelf-life studies under ambient, high-altitude, and extreme temperature conditions.
- Develop modular ration components.
- Select and validate packaging solutions for moisture, oxygen, and light protection.
- Ensure compliance with defence food quality, safety, and storage standards.
Field & User Validation
- Coordinate field trials with armed forces and disaster-relief agencies.
- Evaluate performance under real operational constraints (limited water, fuel, time).
- Incorporate user feedback to improve taste, convenience, and usability.
Documentation & Technology Transfer
- Prepare technical reports, SOPs, and process documentation.
- Support technology transfer to production agencies and industry partners.
- Contribute to scientific publications, patents, and internal DRDO knowledge systems.
Required Qualifications
- M.Tech / PhD in Food Technology, Food Engineering, Food Science, or related discipline
(B.Tech with significant relevant experience may be considered)
Desired Skills & Competencies
- Strong knowledge of dehydration, drying kinetics, and instantization techniques
- Experience with ready-to-eat (RTE), instant, or military/space foods preferred
- Understanding of nutritional formulation for extreme environments
- Sensory evaluation, shelf-life testing, and quality assurance expertise
Ability to work in multidisciplinary R&D and field-oriented environment
