Key Responsibilities
- Cold Food Preparation: Prepare all cold menu items, including salads, appetizers, pâtés, terrines, canapés, and cold sauces, adhering to recipes and visual standards.
- Station Management: Maintain a clean, organized, and properly sanitized cold station.
- Food Safety & Storage: Ensure proper storage, labeling, and temperature control of all food items in refrigerators and coolers.
- Inventory & Ordering: Monitor stock levels of ingredients (vegetables, cheeses, meats) and notify the chef of shortages.
- Presentation: Design and execute attractive, visually appealing, and consistent cold food displays.
- Collaboration: Coordinate with hot line cooks, pastry chefs, and service staff to ensure seamless service. Indeed
Qualifications & Skills
- Experience: 2-3 years of experience in a professional restaurant kitchen, preferably in a similar role.
- Skills: Strong knife skills, knowledge of salad prep, charcuterie, and basic cold sauce techniques.
- Knowledge: Deep understanding of food safety, sanitation guidelines, and proper food handling.
- Abilities: Ability to work quickly, efficiently, and under pressure in a fast-paced environment.
- Education: Culinary school diploma or degree is a plus, but not always required.
