The core of our brand relies on precise culinary engineering, modern execution, and high-performance operational scalability via a synchronized Hub & Spoke system. We are seeking a system-driven, highly technical Head Baker / R&D Baker to join our founding team and take complete ownership of our proprietary bakery product line.
Role Overview & Core Responsibilities
This is an elite, product-focused position. Rather than maintaining existing recipes, you will solve complex culinary chemistry and engineering challenges, subsequently building a scalable manufacturing system around the finalized solutions.
- Stage 1 (June–July 2026): An intensive 2-month R&D project focused on final formula stabilization, parametric stress-testing, and creating production-ready SOPs.
- Stage 2 (August 2026 onwards): Direct transition into a full-time role managing commercial production, training, partner bakery alignment, and regional product scaling.
Key Deliverables:
- Recipe Finalization & R&D: Finalize the formula for our proprietary hybrid bun
- Parametric Testing: Lead structured test bakes across multiple variables to ensure strict compliance with our technical specifications.
- SOP Architecture: Document step-by-step Standard Operating Procedures (SOPs), detailing exact hydration, temperature, humidity, and proofing parameters to ensure 100% replication consistency across commercial batches.
- Production Partner Representation: Hand over the finalized formula to our primary strategic production partner. Act as our primary Quality Control (QC) representative, overseeing daily production routines and batch validation.
- Advanced Product Line R&D: Lead the development of our natural product color-coding system using clean, innovative raw ingredients .
Technical Specifications & Performance Criteria
The successful candidate must engineer the product to meet strict commercial and delivery-transit conditions.
Candidate Profile & Requirements
- Experience: 2+ years of professional experience specializing in enriched doughs, laminated doughs, or premium loaves (brioche, milk bread, Japanese-style pan breads).
- Technical Knowledge: Deep understanding of baking science, starch gelatinization/retrogradation, hydration percentages, cold-retard parameters, and flour protein performance.
- Supply Chain Mindset: Ability to analyze how a product behaves hours after leaving the oven and design systems around transport, storage, and finishing constraints.
- Production Background: Proven experience collaborating with external industrial production partners or commercial central bakeries is highly advantageous.
- Operational Skills: Strong capability in writing clear, professional technical cards and operational SOPs.
