Head Baker / Team Lead

FROM $52,000 annually, paid through weekly paychecks which includes paid days off for federal and state holidays

Responsibilities:

• Efficiently lead the Bakery team in production of all bakery and food products for our year-round menu.. Order supplemental pastries from Pain D’Avignon and/or other food purveyors if necessary.
• Ensure that all equipment is properly cleaned, sanitized, and maintained.
• Keep maintenance spreadsheet up to date (record of internal / external services of all equipment)
• Order all necessary ingredients, supplies, utensils, and equipment
• Meet with staff to perform performance reviews
• Lead hiring, onboarding, and offboarding of employees with assistance from Cafe Operations Manager and HR Manager
• Train all staff on all daily procedures, including proper food handling and allergen awareness.
• Inspect bakery items to ensure that established standards on quality, uniformity, and aesthetic appeal are met
• Resolve customer complaints in a professional manner in coordination with Cafe Manager and Cafe Operations Manager when necessary
• Create weekly schedule for staff that adequately covers needs and respond to requests for time off while maintaining efficiency for labor cost purposes
• Coordinate and/or participate in deliveries to Brewster Cafe and Chatham Espresso Bar
• In coordination with Sandwich Cafe Manager, ensure all pastries are optimally presented and displayed in cases for aesthetic and food safety purposes
• Work on cost analysis of current items on the menu, and for any new products.

Production Process: direct the production phases and manage the upkeep of production environment

• Maintain a clean,presentable, and organized workspace
• Manage bakery staff, assigning and delegating tasks
• Track inventory of goods and other items related to bakery
• Ensure that all baking utensils are properly cleaned, sanitized, and put away
• Be a part of the team developing and implementing online orders - including large bulk orders
• Alert ownership/Cafe Operations Manager of mechanical errors when they occur

Continual Education and Ongoing Development:

• Sample, taste, and evaluate final bake products with coworkers and owners when applicable
• Keep organized records of recipes
• Create 2-4 seasonal specials per change of season in coordination with Cafe Operations Manager to go along with the Cafe Seasonal Specials
• Help to develop Grab & Go food item menu along with ownership / management
• Assist with educating staff, managers, and customers about bakery items and practices

Paid Time Off

Per year, you'd be able to accrue a max of 40 hours of paid sick time and 80 hours of vacation/personal PTO. You can use your vacation/personal PTO for any reason pending approval from ownership. You begin accruing paid sick time on your first day at a rate of 1 hour for every 30 hours worked and you'd be able to start using it after you've completed 90 days of employment. Vacation PTO begins to accrue after 90 days of employment which you can begin using at that same period of time, that accrual is at a rate of 3.08 hours per bi-weekly pay period.
