Head Barista – Menu Development & Costing Focus

Concept: Grill Avenue

We are seeking a highly competent Head Barista with strong expertise in menu development, recipe creation, and beverage costing. This role goes beyond coffee and is not suited for average or routine baristas. We are looking for a professional who can build and manage a complete beverage program from both a quality and commercial perspective.

Key Responsibilities

• Lead the development of the full beverage menu, including:

Coffee (hot & iced)

Fresh juices

Mojitos & mocktails

Milkshakes and specialty cold beverages

• Create standardized recipes with precise measurements and preparation methods
• Manage drink costing, pricing, margins, and portion control
• Ensure beverages are commercially viable, scalable, and consistent
• Select and recommend ingredients, syrups, purées, milks, and suppliers
• Establish recipe cards, SOPs, and preparation standards
• Train and supervise baristas on recipes, techniques, and service execution
• Collaborate with management on menu engineering and profitability
• Maintain high standards of hygiene, equipment care, and daily operations

Requirements

• Proven experience as a Head Barista or Beverage Lead
• Strong knowledge of coffee extraction, milk texturing, and flavor balance
• Demonstrated experience in fresh juices, mocktails/mojitos, and milkshakes
• Solid background in menu development and beverage costing
• Ability to create drinks that are efficient to execute and profitable
• Experience preparing cost sheets, recipe cards, and SOPs
• Leadership skills with the ability to train and manage a team
• Detail-oriented, structured, and business-minded

• This is not a basic coffee-making role
• Applicants must have menu development and costing experience
• Own visa preferred
