Role: Head Chef
Location: Dubai, UAE
Salary: 7-9k AED pm
Hours: Full-Time (45–50 hours per week, negotiable)
Commencement: 1 month

We are Maki & Ramen – a growing, Japanese-inspired dining brand known for our homemade ramen, freshly prepared sushi, and warm, attentive hospitality. As we expand into the UAE, we are bringing our passion for quality, craft, and memorable guest experiences to Dubai.

For our newest Dubai location, we are looking for an experienced and adaptable Head Chef to lead the pre-opening kitchen mobilisation and shape the success of our first site in the region. Key Responsibilities

Pre-Opening & Launch

  • Lead all kitchen mobilisation activities, including set-up, equipment checks, and BOH readiness.
  • Support the recruitment, onboarding, and training of the new kitchen team.
  • Ensure compliance with all Dubai Municipality, HACCP, and food safety standards prior to opening.
  • Oversee pre-opening trials, menu tastings, and operational testing.

Operational Leadership

  • Manage daily kitchen operations, ensuring dishes are prepared and presented to company standards.
  • Lead, motivate, and develop the kitchen team to maintain strong performance and consistency.
  • Maintain excellent food quality, consistency, and presentation across all dishes.
  • Manage stock control, ordering, and supplier relationships in line with UAE procedures.
  • Monitor food cost, wastage, and portion control to meet budget targets.

People & Compliance

  • Train, supervise, and coach kitchen staff on best practices, menu execution, and hygiene procedures.
  • Ensure full compliance with food safety, hygiene, and health and safety regulations.
  • Create a positive, supportive, and professional kitchen culture.

Collaboration & Innovation

  • Work with management to develop menus, seasonal specials, and new items.
  • Maintain a clean, organised, and safe kitchen environment at all times.
  • Support continuous improvement across all kitchen operations.

Skills & Qualifications

  • Proven experience as a Head Chef or Senior Sous Chef in a busy, quality-led restaurant.
  • Strong leadership skills, with experience managing multi-national kitchen teams.
  • Excellent culinary skills with a passion for high-quality Japanese cuisine (ramen/sushi experience advantageous).
  • Thorough knowledge of HACCP, Dubai Municipality standards, and international food safety requirements.
  • Strong organisational and time management abilities.
  • Able to remain calm, professional, and decisive under pressure.
  • Good understanding of stock control, ordering processes, and cost management.
  • Creative, proactive, and committed to continuous improvement.
  • Flexible, adaptable, and hands-on in approach.
