The Role

You'll own your kitchen end to end. Product, team, costs, consistency, and standards every service. You'll work closely with your Restaurant Manager and report into our wider operations leadership. You'll have the autonomy of a Head Chef and the support of a growing group.

What you'll be doing

  • Leading your kitchen — every service, every plate, to Rowley's brand standards.
  • Owning your team — hiring, training, developing, and holding the brigade accountable.
  • Managing food cost, ordering, supplier relationships, and waste.
  • Running daily operations — prep, service, mise en place, line discipline.
  • Working with the group on menu development, specials, and seasonal additions.
  • Maintaining HACCP and Dubai/Abu Dhabi Municipality food safety standards.
  • Travelling occasionally across sites for openings, training, and cross-team work.

Who we're looking for

Essential

  • Strong protein and grill background — steakhouse, BBQ, fire-led, or premium meat-driven concept.
  • Proven Head Chef or senior Sous Chef experience in a high-volume, high-standard kitchen.
  • Real leadership — you build teams, you don't just manage shifts.
  • Commercial discipline — food cost, ordering, waste, and a clean P&L mindset.
  • Calm under pressure. Friday nights at full covers don't break you.
  • Aligned with the Rowley's spirit — confident not loud, warm not soft.

Strong advantage

  • Steakhouse background (Hawksmoor, STK, CUT, Goodman, Beast & Butler, or similar).
  • UAE or GCC experience — you know the suppliers, the market, the regulations.
  • Pre-opening or new-site launch experience.
  • Arabic an advantage, not a requirement.
