Head Chocolatier & Production Manager

We are seeking a highly skilled professional to lead chocolate and pastry production at our premium facility. This is a senior role covering production management, R&D, quality control, and team leadership. The ideal candidate must be hands-on with SELMI machinery and experienced in bean-to-bar chocolate making.

Key Responsibilities

  • Lead daily production operations and manage the kitchen team.
  • Operate SELMI chocolate machinery and oversee bean-to-bar processes.
  • Ensure compliance with HACCP, ISO, FSSC, and food export standards.
  • Drive R&D for new chocolates, pastries, and seasonal collections.
  • Maintain high standards of quality, hygiene, and wastage control.
  • Collaborate with management and actively participate in tastings & product launches.

Requirements

  • 3–5 years in a senior role such as Head Chocolatier / Senior Pastry Chef / Production Head.
  • Proven experience in premium chocolate or pastry kitchens.
  • Hands-on knowledge of SELMI machinery and bean-to-bar chocolate making.
  • Strong leadership and team management skills.
  • Solid knowledge of food safety standards (HACCP, ISO 22000, FSSC).
  • Culinary/pastry qualification preferred.

Job Type: Full-time

Pay: AED15,000.00 - AED25,000.00 per month

  • executive chocolate chef: 3 years (Required)

License/Certification:

  • HACCP certificate (Preferred)
