- Menu Planning: Plan and design a rotating menu of authentic North and South Indian dishes & Pakistani dishes (e.g., curries, biryanis, tandoori items, snacks, and breads like naan/roti)
- Food Preparation & Cooking: Prepare and cook meals in bulk quantities for a large number of people, ensuring consistency in taste, quality, portion, and presentation for breakfast, lunch, and dinner.
- Kitchen Management: Oversee daily kitchen operations, including inventory control, stock management, storage, and waste management to maintain food costs within budget.
- Hygiene & Safety: Ensure the highest standards of kitchen cleanliness, food safety, and sanitation, complying with all UAE food safety regulations and company policies.
- Equipment Operation: Safely operate and maintain various kitchen equipment, including large-scale cooking utensils and tandoor ovens.
- Team Supervision: Train, supervise, and coordinate with junior kitchen staff and helpers, including cooks and cleaners.
- Supplier Coordination: Collaborate with suppliers to source high-quality, fresh ingredients
- Required Qualifications & Skills
- Experience: Proven experience in bulk or large-scale cooking, preferably in labor camps, hostels, or canteens.
- Culinary Knowledge: In-depth knowledge of authentic Indian cooking techniques, spices, and flavors, across both traditional and potentially Indo-Chinese styles.
- Leadership: Strong leadership, communication, and team management skills to manage a diverse environment.
- Work Ethic: Ability to work under pressure in a fast-paced environment and manage multiple tasks efficiently.
- Hygiene Certification: Strong understanding of health and safety standards in kitchen environments.
- Flexibility: Willingness to work extended hours, weekends, and holidays as required by the camp's schedule.
