The Kitchen Stewarding Manager is responsible for overseeing all stewarding operations to ensure the highest standards of cleanliness, hygiene, sanitation, and organization in all kitchen and back-of-house areas. This role ensures smooth support to culinary and service teams, manages stewarding staff, controls operational costs, and upholds all 5-star hotel standards and food safety regulations.

Key Responsibilities

1. Operations & Hygiene Management

  • Ensure all kitchens, dishwashing areas, storerooms, pot wash areas, and waste disposal zones are maintained in impeccable cleanliness at all times.
  • Implement and monitor strict hygiene, sanitation, and safety procedures (HACCP, ISO, local food safety laws).
  • Oversee dishwashing, equipment cleaning, and deep-cleaning schedules.
  • Ensure proper handling, storage, and rotation of kitchen equipment and chemicals.

2. Team Leadership & Training

  • Lead and supervise stewarding supervisors, stewards, and cleaners across all shifts.
  • Conduct regular training on hygiene, sanitation, equipment handling, and safety protocols.
  • Develop staff schedules, ensure adequate coverage for events, peak periods, and daily operations.
  • Promote a positive, disciplined, and efficient working environment.

3. Equipment & Inventory Management

  • Maintain inventory of kitchen operating equipment (KOE) such as chinaware, glassware, cutlery, and utensils.
  • Plan regular stock counts and coordinate with purchasing to meet operational needs.
  • Monitor and minimize breakage, loss, and misuse of KOE.
  • Ensure all dishwashers, compactors, and cleaning equipment are well-maintained and repaired promptly.

4. Cost Control & Budgeting

  • Manage stewarding budget, including chemicals, equipment replacements, and labor.
  • Implement cost-saving practices without compromising luxury standards.
  • Monitor chemical usage and negotiate with suppliers in coordination with procurement.

5. Coordination & Communication

  • Work closely with the Executive Chef, banquet operations, and restaurant managers to support daily operations and large events.
  • Attend F&B meetings, event briefings, and operational planning sessions.
  • Coordinate stewarding support for banquets, catering, and special functions.

6. Compliance & Standards

  • Ensure compliance with hotel brand standards, local regulations, and international hygiene requirements.
  • Conduct regular inspections and submit daily/weekly reports.
  • Lead internal and external hygiene audits and corrective action plans.

Skills & Qualifications

  • Minimum 3–5 years experience in a stewarding leadership role, preferably in a 5-star luxury hotel.
  • Strong understanding of HACCP, food safety, and sanitation procedures.
  • Excellent leadership, training, and communication skills.
  • Strong organizational and time-management abilities.
  • Experience in cost control, inventory management, and budgeting.
  • Ability to work under pressure and manage large teams.
  • Proficiency in hotel management systems is an advantage.

Job Type: Contract
Contract length: 24 months

Pay: AED4,000.00 - AED5,000.00 per month
