Lead Line Cook – Grill & Meat Fabrication
At Claywood, we are seeking a highly skilled and disciplined Lead Line Cook with advanced grill experience and a strong foundation in meat fabrication. This role is not simply about executing tickets — it is about ownership, consistency, and leadership on the hot line.
Core Responsibilities:
Meat Fabrication & Stewardship
- Break down primal and sub-primal cuts with precision and minimal waste
- Manage portioning standards to protect food cost and consistency
- Oversee dry-aged and specialty meat handling
- Ensure proper storage, labeling, and rotation
- Maintain yield accuracy and communicate discrepancies
Grill Leadership
- Own the grill station during service
- Execute all proteins to exact temperature and plating standards
- Maintain speed without sacrificing precision
- Control fire management, resting protocols, and timing
- Ensure consistency across every plate leaving the pass
Consistency & Standards
- Train and support cooks assigned to grill
- Maintain cleanliness and organization of the hot line
- Uphold ServeSafe and sanitation standards
- Communicate proactively with Chef and Sous Chefs
- Identify inefficiencies and recommend improvements
Ideal Candidate:
- 3–5+ years experience in high-level grill execution
- Confident in butchery and fabrication techniques
- Strong understanding of food cost and yield management
- Calm under pressure with high-volume execution
- Respectful, team-oriented, and solutions-focused
- Passionate about locally sourced proteins and seasonal menus
This role requires maturity, discipline, and pride in craft. You will be entrusted with protecting the integrity of our meat program and ensuring every guest receives a perfectly executed plate.

Pay: $22.00 - $24.00 per hour
