Manager - Food & Beverage

We are seeking an experienced and highly motivated Manager - Food & Beverage to join our dynamic team . A leading 4-star hotel in the UAE. As the Manager - Food & Beverage, you will be responsible for overseeing the daily operations of both the Food & Beverage and Food Production departments. You will ensure high standards of service, quality, and compliance with local regulations, while also driving revenue generation strategies and implementation. This is a key leadership role, and the successful candidate will play a pivotal part in the growth and success of our food and beverage operations.

Key Responsibilities:

  • Overall Department Management:
  • Oversee and manage the daily operations of the Food & Beverage and Food Production departments, ensuring all outlets (restaurants, bars, banqueting, room service) and kitchen operations run smoothly and efficiently.
  • Develop and implement F&B standards, procedures, and operational guidelines in alignment with the hotel’s objectives.
  • Monitor the overall quality and consistency of food and beverage production, presentation, and service, ensuring they meet or exceed guest expectations.
  • Revenue Creation & Strategy:
  • Develop and implement strategies to drive food and beverage sales and maximize revenue across all F&B and food production outlets.
  • Identify and capitalize on new revenue opportunities, such as promotions, themed events, partnerships, and seasonal offerings.
  • Monitor sales performance, track KPIs, and adjust strategies to meet revenue goals and targets.
  • Collaborate with the sakes & marketing team to create promotional campaigns, special events, and offers to drive customer traffic and increase F&B revenue.
  • Analyze market trends, customer preferences, and competitor offerings to adjust the hotel's F&B pricing and marketing strategies accordingly.
  • Budgeting & Financial Management:
  • Oversee the F&B and Food Production departments’ budgeting process, including cost control, pricing strategies, and revenue management.
  • Ensure effective budgeting for food and beverage purchasing, food production costs, staffing, and other operational expenses to meet financial goals.
  • Prepare reports on financial performance, and recommend cost-saving measures without compromising quality or guest experience.
  • Menu Development & Knowledge:
  • Work closely with the kitchen team to design and update menus for both the Food & Beverage and Food Production departments, ensuring offerings reflect market demand, seasonal ingredients, and customer preferences.
  • Ensure the menu aligns with local food trends, dietary preferences, and the overall guest experience.
  • Maintain a strong knowledge of wine, spirits, and other beverage offerings, ensuring a balanced and innovative selection.
  • Compliance & Safety:
  • Ensure full compliance with HACCP (Hazard Analysis and Critical Control Points) standards, Dubai Municipality regulations, and any other relevant local health and safety standards in both the F&B and food production operations.
  • Regularly audit food storage, preparation, and serving practices to ensure safe and hygienic food handling.
  • Maintain records of compliance, training, and inspections as per Dubai Municipality guidelines.
  • Staff Management & Development:
  • Lead, manage, and train both the Food & Beverage and Food Production teams, ensuring staff deliver exceptional service and maintain high standards in both guest-facing and kitchen operations.
  • Conduct regular staff training, evaluations and performance reviews, providing feedback for continuous improvement.
  • Ensure all staff are trained in food safety, customer service, and compliance with hotel standards.
  • Guest Relations & Service Excellence:
  • Engage with guests to ensure satisfaction with F&B offerings and address any special requests or concerns.
  • Develop and implement strategies to enhance the overall guest dining experience and create memorable moments.
  • Key Requirements& Experience:
  • Minimum 1-3 years of experience in a Manager Food & Beverage or Assistant Manager Food & Beverage role, with responsibility for both Food & Beverage and Food Production departments, within a 3- or 4-star hotel in the UAE or similar hospitality setting.
  • Proven track record of managing multiple F&B outlets and food production operations (restaurants, bars, banqueting, kitchen).
  • Strong experience in budgeting, financial management, cost control, and revenue generation strategies within the F&B sector.
  • Knowledge & Skills:
  • In-depth knowledge of HACCP food safety standards and Dubai Municipality compliance regulations.
  • Expertise in menu design and food trends, with a strong understanding of international cuisines, food production operations, and beverage pairings.
  • Strong leadership, interpersonal, and communication skills.
  • Excellent customer service and conflict resolution abilities.
  • Fluency in English; additional languages are a plus.
  • Education & Certification:
  • A degree in Hospitality Management, Culinary Arts, or a related field is preferred.
  • Relevant certifications in food safety and HACCP.
  • Certification in first aid or food hygiene training is a plus.
