About La Fonda

La FONDA is a premium halal food brand expanding in Dubai. We are seeking a Menu Developer / Food Concept Developer to create a complete Ready-To-Eat menu for e-commerce, delivery, and our future retail concept, La Fonda – Gourmet Market & Eatery.

The consultant must demonstrate a strong ability to understand La Fonda’s brand identity and adapt it to the Dubai market.

Responsibilities

• Develop the full Ready-To-Eat menu across all categories (starters, salads, sandwiches, bowls, hot meals, snacks, desserts, beverages).
• Ensure menu consistency with La Fonda’s identity (premium, clean, modern, halal).
• Adapt recipes, formats, and concepts to the Dubai F&B and delivery market.
• Create full recipe sheets (ingredients, grammage, costing, preparation methods, allergens).
• Recommend packaging solutions for delivery & retail.
• Develop operational workflows for production in our Al Quoz facility.
• Conduct product tests and adjust based on feedback.
• Provide weekly reporting to Casablanca HQ.

Requirements

• Proven experience in Ready Meals, Dark Kitchens, Deli or Grab & Go concepts.
• Strong understanding of the UAE delivery market and consumer expectations.
• Ability to build a menu from an existing product catalogue (no fine dining).
• Creative, structured, and business-focused.
• Strong documentation and communication skills.
• UAE or GCC market experience is a strong plus.
