Job Summary
The Operations Manager oversees the day-to-day operations of the artisanal bakery, ensuring efficient production, consistent product quality, food safety compliance, and smooth coordination between baking and supply chain activities. This role balances hands-on leadership with planning, process improvement, and team development while preserving the bakery’s artisanal standards and brand values.
Key Responsibilities
1. Production & Quality Control
- Oversee daily production schedules for bread, brioche and pastries
- Ensure consistency in recipes, fermentation processes, and baking standards
- Maintain high product quality aligned with artisanal methods and brand values
- Monitor waste levels and implement strategies to reduce spoilage
2. Operations & Process Management
- Plan and optimize workflows for baking, packing, and operations
- Coordinate equipment maintenance and manage repairs
- Implement and improve operational procedures and documentation
- Ensure smooth opening and closing procedures
3. Inventory & Supply Chain
- Manage inventory of ingredients, packaging, and supplies
- Source high-quality ingredients from suppliers and maintain vendor relationships
- Forecast ingredient needs based on sales trends and seasonal demand
- Control costs while maintaining product quality
4. Team Leadership & Scheduling
- Supervise bakers, pastry chefs, and support staff
- Create staff schedules aligned with production and bakery needs
- Train team members on processes, quality standards, and safety procedures
- Foster a positive, collaborative, and accountable work culture
5. Food Safety & Compliance
- Ensure compliance with local health, food safety, and labor regulations
- Maintain hygiene, sanitation, and allergen control standards
- Lead health inspections and corrective actions when needed
6. Financial & Performance Management
- Monitor labor costs, food costs, and operational expenses
- Track KPIs such as yield, waste, sales versus production, and labor efficiency
- Support pricing decisions and cost control initiatives
- Provide regular operational reports to management
Qualifications & Experience
- 3+ years of operations or production management experience in a bakery, café, or food production environment
- Strong understanding of artisanal baking processes (bread fermentation, sourdough, pastry basics)
- Experience managing teams and schedules
- Knowledge of food safety standards and regulations
Preferred Qualifications
- Culinary or baking education
- Experience in scaling artisanal production
- Familiarity with POS systems and inventory software
Job Type: Full-time
Pay: AED10,000.00 - AED13,000.00 per month
