Job Description
To lead and manage all pastry and bakery operations, ensuring large-scale production of high-quality products while maintaining consistency, innovation, cost efficiency, and compliance with food safety standards.
Responsibilities
- Oversee end-to-end pastry and bakery production across the central kitchen and/or multiple sites
- Develop, standardize, and improve recipes for breads, pastries, desserts, and baked goods
- Ensure consistent product quality, taste, and presentation across all outlets
- Lead and manage pastry and bakery teams, including training, scheduling, and performance management
- Plan production schedules to meet retail and catering demand efficiently
- Monitor food cost, wastage, and resource utilization to improve efficiency
- Ensure compliance with HACCP, hygiene, and QHSE standards
- Coordinate with procurement to source high-quality ingredients and supplies
- Drive innovation by introducing new products aligned with market trends and client requirements
- Ensure proper use, maintenance, and care of bakery equipment and machinery
- Support business growth through product development for retail and contract catering operations
Requirements
- Proven experience as an Executive Chef or Senior Pastry/Bakery Chef
- Strong background in retail or large-scale bakery operations
- Hospitality experience is required
- Expertise in large-scale production of breads, viennoiserie, cakes, and desserts
- Strong leadership and team management skills
- Experience managing high-volume production environments
- Solid understanding of food cost control and operational efficiency
- Good knowledge of HACCP and food safety regulations
Preferred Qualifications
- Degree or diploma in Culinary Arts, Pastry, or Bakery
- Experience in central kitchen or multi-unit operations
- Exposure to GCC market and consumer preferences
- Experience in menu engineering and product innovation
