Product Development Specialist – Frozen Desserts

Job Purpose

The Product Development Specialist is responsible for developing, optimizing, and industrializing frozen dessert products (ice cream, sorbets, frozen dairy and non-dairy desserts, frozen pastries) from concept to commercial launch, ensuring product quality, regulatory compliance, cost efficiency, and consumer appeal.

Key Responsibilities

• Develop new frozen dessert products and improve existing formulations based on marketing briefs and market trends
• Design and test formulations ensuring optimal taste, texture, stability, and shelf life under frozen conditions
• Conduct laboratory, pilot, and industrial trials in collaboration with Production and Quality teams
• Manage scale-up and industrialization of recipes while ensuring process robustness
• Optimize formulations for cost, performance, and raw material efficiency
• Work cross-functionally with Marketing, Quality, Supply Chain, Procurement, and Manufacturing teams
• Ensure compliance with food safety standards, regulatory requirements, and labeling regulations
• Prepare and maintain technical documentation (recipes, specifications, trial reports)
• Support post-launch monitoring and continuous improvement initiatives

Candidate Profile

Education

• Master’s degree preferred (or equivalent) in Food Science, Food Technology, Agro-Food Engineering, or related field

Experience

• 5–6 years of hands-on product development experience in the food industry
• Mandatory experience in frozen desserts (ice cream, sorbets, frozen dairy or plant-based desserts, frozen bakery)

Technical Skills

• Strong knowledge of raw materials (dairy, plant-based ingredients, sugars, stabilizers, emulsifiers)
• Solid understanding of frozen dessert processing and cold chain constraints
• Experience with industrial scale-up and manufacturing processes
• Knowledge of food regulations, food safety standards, and labeling requirements
• Ability to analyze costs and optimize formulations
