QA Technician

Job Description

This person reports to the FSQA Supervisor.

Job duties include:

1. Inspecting production operations on an hourly basis for the purpose of:

A. Ensuring that the oldest product is used first. This includes proper rotation of product in the coolers.

B. Monitoring tray pack items so they are correctly trayed, sealed, cut, labeled, priced, sell by dated, packaged, and case labeled.

C. Checking all labels and packages for correct weights, tares, pack dates, sell by dates, product descriptions, kill dates, and bar codes.

D. Monitoring product temperatures and room temperatures; informing production and maintenance personnel of any unacceptable deviations.

E. Weighing samples of portion control items to ensure that correct trimming and sizing is being performed.

F. Monitoring product appearance, smell, and acceptability (no blood clots, correct trimming, no bones, etc.)

G. Checking metal detectors to ensure they are performing properly.

2. Performing pre-operational inspections and swab tests to determine the effectiveness of cleaning and sanitation.

3. Performing daily thermometer calibration checks – calibrating thermometers when needed.

4. Testing chicken samples for bacteria to ensure that product is safely within specifications.

5. Performing bacteria tests and recording the results.

6. Monitoring seasoned product formulation and yields.

7. Monitors HACCP and completes the proper paperwork 2 to 3 times daily.

8. Performs product showings once or twice a week for production supervisors and sales people.

9. Investigating Quality Control problems and irregularities.

10. Performing other duties as assigned.

1. Able to stand and walk in a 39o F. room for 85% of the workday with 5 minute warming, sitting interludes every hour or so.

2. Able to lift boxes weighing 50 lbs.

3. Able to wear steel toed, waterproof shoes or work boots all of the work day.
