Job Summary:

The R&D Chef will be responsible for driving innovation within the chocolateries by developing new products, refining existing recipes, and ensuring alignment with market trends, customer demands, and company standards. This role combines creativity and technical expertise in chocolate and confectionery production, with a strong focus on food safety, quality, and cost efficiency. The R&D Chef will collaborate with production, marketing, procurement, and retail and Sales teams to deliver unique, high-quality products that strengthen the brand’s reputation.

Reporting:

  • Reports Directly to Executive Chef / Operating Manager on a daily basis with regard to the daily operations, Samples, Trails and any other relevant issues.
  • Weekly Meetings with Head of Business management and head of operation.
  • Monthly Meetings with Management.
  • Reports to HR department with regard to any Employee issues, Employee performances and related matters.

Key ResponsibilityProduct Research & Development

  • Conceptualize, develop, and test new chocolate products, seasonal lines, and innovative confectionery creations.
  • Refine existing recipes to improve quality, consistency, and cost efficiency.
  • Maintain detailed documentation of every recipe formulation, trial, and final version—recording batch numbers and development notes—following the structure of the sample request form.
  • Ensure proper segregation and labeling of all R&D samples, including raw materials, semi-finished, and final products.
  • Conduct product tastings and presentations for management approval.
  • Stay updated with global chocolaterie and confectionery trends, and translate them into commercially viable concepts.
  • Maintain a master recipe book and ensure all approved recipes are shared with Quality Assurance, Production, and Business Heads.

Quality, Food Safety & Documentation Control

  • Ensure all R&D activities comply with HACCP, Ajman Municipality, and other food safety standards.
  • Guarantee consistency in taste, texture, and appearance across all developed products.
  • Create and maintain recipe and process documentation for every new product, including raw material usage, production steps, and quality checkpoints.
  • Maintain a digital and physical filing system for all R&D documentation (recipes, cost sheets, product trials, approvals).
  • Audit recipe implementation periodically to ensure accuracy, version control, and compliance with production standards.
  • Collaborate with the QA team to ensure traceability and compliance during product scale-up or audits.

Cost & Inventory Management

  • Work closely with procurement to source high-quality and cost-efficient raw materials.
  • Monitor recipe costing to ensure profitability and cost-effectiveness in production.
  • Support the operations and inventory teams by providing detailed information on new product ingredient requirements and shelf-life data.

Collaboration & Coordination

  • Collaborate with marketing, retail, and corporate sales teams to identify product gaps and propose new creations.
  • Collect feedback from outlets, clients, and events to refine product offerings.
  • Coordinate with the production team to ensure smooth scaling from prototype to mass production without compromising quality or consistency.
  • Training & Knowledge Sharing
  • Train production staff on new recipes, preparation techniques, and quality standards.
  • Conduct internal workshops and product knowledge sessions for team development.
  • Support corporate activities, demos, and product workshops as required.

Brand Representation & Events

  • Represent the brand during tastings, product launches, and culinary events.
  • Conduct product demonstrations and interactive sessions for clients and partners.
