What will I be doing? 
As a Head Butcher, you are responsible for ensuring all meats and fish are prepared to the highest quality to deliver an excellent Guest and Member experience. A Head Butcher will also be required train staff and control costs. Specifically, you will be responsible for performing the following tasks to the highest standards:
<ul><li>Prepare all meats and fish to the highest quality and within company guidelines</li>
<li>Ensure effective food storage and stock rotation</li>
<li>Report any food spoilage/wastage to the Head Chef</li>
<li>Keep all working areas clean and tidy and ensure no cross contamination</li>
<li>Assist in positive outcomes from guest queries in a timely and efficient manner</li>
<li>Establish and monitor portion sizes for cuts of meat and fish</li>
<li>Responsible for controlling costs without compromising standards, improving gross profit margins and other departmental and financial targets</li>
<li>Assist other departments and maintain good working relationships</li>
<li>Responsible for complying with and training Health and Safety and Food Safety standards and legislation</li>
<li>Comply with hotel security and fire regulations</li>
<li>Report maintenance, hygiene and hazard issues</li>
<li>Be environmentally aware</li>

Qualifications 
To execute the position of Commis Butcher, I must have the required qualifications, technical skills and experience in a similar role in luxury hotels with proven results and includes the following:
<ul><li>High school diploma or equivalent and at least 3 years kitchen experience in a full-service outlet or similar setting. Hospitality diploma/degree from a recognized hospitality school is preferred.</li><li>Knowledge of the use of broiler equipment and understanding of meat and fish cookery, proficient knife skills and understand farm to table concept.</li><li>Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local or state government agency.</li><li>I have an excellent command of written and spoken English, and I am able to live in a remote location for extended periods of time and travel on single status.</li></ul>
