Job Title: Sous Chef – Bakery & Pastry

Job Summary
The Sous Chef – Bakery & Pastry is responsible for assisting in the management and daily operations of the bakery and pastry section. This role ensures high-quality production, consistency, food safety compliance, and smooth kitchen operations while supporting the Executive Chef and leading the pastry team.
Key ResponsibilitiesOperations & Production
- Oversee daily preparation and production of bakery and pastry items.
- Ensure consistency in taste, presentation, and portion control.
- Develop and test new recipes in line with brand standards.
- Monitor quality control and minimize wastage.
- Ensure timely production for retail, catering, and wholesale orders (if applicable).
Team Management
- Supervise, train, and guide junior pastry chefs and kitchen staff.
- Schedule shifts and allocate duties efficiently.
- Maintain discipline and positive team morale.
- Step in to lead the section in the absence of the Head Pastry Chef / Executive Chef.
Food Safety & Compliance
- Ensure compliance with HACCP and food safety regulations.
- Maintain cleanliness and organization of the pastry kitchen.
- Monitor proper storage and labeling of ingredients.
- Ensure adherence to health and hygiene standards.
Inventory & Cost Control
- Monitor stock levels and coordinate ordering of ingredients.
- Assist in cost control and maintaining food cost targets.
- Reduce waste and improve operational efficiency.
Qualifications & Requirements
- Proven experience as a Pastry Chef or Senior Pastry Chef (minimum 3–5 years experience). HEAVY BAKERY EXPERIENCE
- Strong knowledge of baking techniques, dough preparation, desserts, and pastry production.
- Experience in high-volume production or catering is an advantage.
- Leadership and team management skills.
- Knowledge of food safety standards (HACCP certified preferred).
- Ability to work under pressure in a fast-paced environment.
