Schlow Restaurant Group, led by James Beard Award–winning Chef Michael Schlow, is preparing to open its Washington, DC flagship restaurant in Spring 2026.
For more than two decades, Michael Schlow has been recognized nationally for delivering refined yet approachable cuisine rooted in technique, seasonality, and hospitality. The new DC flagship will reflect that legacy while setting a new standard for modern American dining in the city.
This restaurant will be a high-profile, design-forward space built for year-round energy. The concept will feature elevated American cuisine with strong seasonal influence, a dynamic bar program, private dining, and a vibrant dining room designed to become a true neighborhood anchor and destination.
We are seeking a disciplined, high-energy Sous Chef to support the Executive Chef in building and leading this kitchen from the ground up.
The Role
The Sous Chef is a critical member of the leadership team, responsible for overseeing daily kitchen operations, ensuring food quality, and managing a professional line. This role requires a hands-on leader who excels in high-volume environments and is committed to upholding flagship standards. You will work closely with the Executive Chef to execute the culinary vision while maintaining the systems and culture necessary for long-term success.
Leadership & Culture
- Daily Presence: Lead from the front, maintaining a visible and active presence on the line during service.
- Team Development: Train, mentor, and supervise line cooks and prep staff to ensure consistency and professional growth.
- Accountability: Help maintain a positive, high-accountability kitchen culture centered on respect and excellence.
- Collaboration: Work alongside the front-of-house team to ensure seamless communication and an exceptional guest experience.
Operations & Execution
- Quality Control: Oversee all food preparation and presentation, ensuring every dish meets the restaurant’s exacting standards.
- System Management: Implement and enforce prep pars, service protocols, and organization systems established by the Executive Chef.
- Innovation: Assist in the testing and execution of seasonal menu changes and daily features.
- Volume Management: Ensure the kitchen maintains speed and consistency during high-volume periods without compromising quality.
Purchasing & Financials
- Inventory: Assist with daily ordering, receiving, and inventory management to ensure product freshness and availability.
- Waste Management: Monitor prep levels and portion control to minimize waste and support food cost targets.
- Labor Control: Assist in managing daily labor by ensuring efficient scheduling and station productivity.
Quality, Safety & Standards
- Sanitation: Maintain uncompromising standards for kitchen cleanliness and organization.
- Compliance: Ensure strict adherence to DC health and safety regulations at all times.
- Maintenance: Oversee the proper use and preventive maintenance of all kitchen equipment.
Qualifications
- Experience: 5+ years of professional kitchen experience, with at least 2 years in a Sous Chef or lead line role.
- Background: Experience in high-volume, refined dining environments; opening experience is a plus.
- Technical Skills: Strong foundational cooking techniques and a deep understanding of food safety and sanitation.
- Leadership: Proven ability to lead a team under pressure with high emotional intelligence and clear communication.
- Availability: Ability to work a flexible schedule, including nights, weekends, and holidays.
