Технолог | Technologist | Quality Assurance in Meal Production (Russian Speaking)

THE MEAL is a fast-growing food production company launched in October 2024. The company is a subsidiary of a large Russian food-tech brand and has an ambitious expansion plan across the GCC and Asia. Now we are looking for a Technologist/Quality Assurance Assistant to support production kitchens and logistics operations in Dubai. This role combines hands-on kitchen quality control with operational and administrative tasks.

Responsibilities:

Kitchen Quality & Food Safety

• Conduct quality control checks of finished products at production kitchens
• Verify compliance with recipes and technological (process) cards
• Assess kitchen sanitation and adherence to food safety standards (HACCP / local regulations)
• Identify production issues (undercooking, recipe deviations, ingredient quality problems)
• Communicate findings to kitchen staff and assign corrective actions
• Control rework of non-compliant items and confirm final results
• Participate in shipment and dispatch control, including early morning kitchen visits

Operations & Administration

• Complete quality control checklists and document inspection results
• Place production orders with kitchens
• Place and manage logistics orders
• Work with the company’s internal backend systems (English interface)

Requirements:

• Knowledge of food safety standards, including HACCP, ISO 22000, and Dubai Municipality Food Code
• Understanding of food preparation and portioning processes, including rules for thermal processing, cooling, packaging, and storage
• Knowledge of sanitation and hygiene standards: storage temperature control, sanitation frequency, staff hygiene requirements, and equipment handling
• Organoleptic quality control skills: ability to assess taste, smell, texture, and appearance; basic understanding of food microbiology
• Ability to work with recipes, technological cards, and dish specifications
• Basic understanding of professional kitchen operations and workflows
• Culinary background: relevant education or hands-on experience in food production or professional kitchens
• Fluent Russian and English
• Having a laptop or computer
• Adaptability to unfixed working hours

• Salary 4000 - 5000 AED
• Part-time job - 24 working hours a week (2,5 - 3 working days)
