About The Hotel
Mining Exchange Hotel was built in 1902 as a stock exchange for local mining companies, The Mining Exchange Hotel offers a one-of-a-kind experience in the heart of downtown Colorado Springs. Our elegant, yet casual public spaces, and guestrooms are all newly renovated.
Job Role
The Restaurant Cook works in a fast paced, exciting environment to deliver on our commitment to high quality hospitality. The Restaurant Cook prepares food in accordance with recipes set by the executive chef, ensuring meal quality and guest satisfaction.
Responsibilities<ul>
<li>
Prepare food of consistent quality following recipe cards, use records, production, and portion standards, per order specks</li>
<li>Start food items that are prepared ahead of time, making sure not to prepare more than estimated needs</li>
<li>Remembering all the multiple orders and easily assembling them to the order</li>
<li>Work all stations on kitchen line to include broiler, saut&eacute;, fry, pantry, and expediter stations</li>
<li>Date all food containers and rotate as per the SOP, making sure that all perishables are kept at proper temperatures</li>
<li>Check pars for shift use, determine necessary preparation, freezer pull, and line set up. Note any out-of-stock items or possible shortages. Assist in keeping buffet stocked</li>
<li>Return all food items not used on the next shift to designed storage areas, being sure to cover/date all perishables</li>
<li>Assist in setting up plans and actions to correct any food cost problems, control food waste, loss and usage.</li>
<li>Ensure the daily operation of the back of house adheres to operating procedure guidelines</li>
<li>Perform food preparation tasks for all fruits, vegetables, meats, poultry, fish, etc. used in recipes</li>
<li>Prepare all food items per recipe guidelines, tasting and adjusting for flavor with assistance of chef</li>
<li>Ensure back of house area adheres to the highest standards of cleanliness, presentation, and service</li>
<li>Maintain appropriate levels of necessary dishes and utensils; keep all dishware used in cooking and serving clean and sanitary at all times</li>
<li>Monitor supply levels in back of house area and replenish as necessary</li>
<li>Monitor equipment operation, perform preventative maintenance, troubleshoot breakdowns, maintain supplies, and call for repairs as necessary</li>
<li>Ensure compliance with all food-handling and sanitation regulations</li>
<li>Any other duties as assigned.</li>
</ul>
Basic Qualifications &amp; Skills<ul>
<li>
Some High School education or equivalent</li>
<li>Must be flexible regarding scheduling based on business demands, including nights, weekends and Holidays as needed</li>
<li>Successful completion of criminal background check</li>
</ul>

Enrollment in, or willingness to work towards culinary degree</li>
<li>Previous cook experience</li>
<li>Understanding of sanitation-related issues and knowledge of precautions necessary to ensure a clean food preparation environment</li>

<li>Enthusiastic and positive energy</li>
</ul>
Physical Requirements<ul>
