The Bakery Technician will be responsible for maintaining, troubleshooting and optimizing bakery production processes and equipment, ensuring the highest quality of baked goods while adhering to hygiene and safety standards. The right candidate will have prior bakery experience and technical aptitude to work with production machinery and baking processes.
Key Responsibilities:
- Operate and monitor bakery production equipment (e.g., mixers, dividers, proofers, ovens, sheeters) to ensure smooth workflow.
- Perform preventive maintenance, minor repairs and equipment calibration, and report major faults.
- Troubleshoot production issues (e.g., dough inconsistency, oven settings, equipment malfunction) and collaborate with maintenance or engineering teams to resolve.
- Assist in refining baking processes, adjusting parameters (temperature, time, humidity, formulation) to improve consistency, yield and quality.
- Support formulation and recipe management: measure ingredients, weigh and mix as per standard operating procedures and adjust when required.
- Maintain accurate records of equipment performance, maintenance logs, production output, quality checks and deviations.
- Ensure compliance with hygiene, food safety (HACCP, GMP) and housekeeping standards in the production area.
- Train and support bakery production staff on equipment use, safety and process adherence.
- Collaborate with QA/Production teams to implement continuous improvement initiatives (reduce waste, improve throughput, reduce downtime).
- Assist in inventory of spare parts and wear-and-tear supplies for bakery machinery.
- Work flexible shifts (early morning/late night) as required by production schedule.
Qualifications & Experience:
- Minimum of 2-3 years (or specify) of experience working in a commercial bakery, baking facility or bakery-production environment.
- Technical aptitude and experience working with bakery equipment and processes (e.g., mixers, rollers, dividers, sheeters, proofers, ovens).
- Formal qualification preferred (e.g., certificate/diploma in Baking Science, Food Technology, or related field).
- Strong knowledge of baking science: dough fermentation, mixing, proofing, baking, cooling, and packaging processes.
- Familiarity with food safety standards (HACCP, GMP) and hygiene practices in bakery production.
- Ability to read and interpret technical documentation, equipment manuals, and production specifications.
- Good problem-solving, attention to detail, communication skills and ability to work in a fast-paced, production-oriented environment.
- Flexibility with shifts, working early/late hours or weekends as required.
- Should aware of bakery equipment and chiller and freezers knowledge
- UAE Driving license is a plus.
