JOB SUMMARY:
W are looking for s qualified Sous Chef who will be responsible for overseeing all activity in the kitchen to ensure efficiency and safety. You will also be responsible for maintaining optimum food quality and consistency. Serve as an extension of the Head Chef to coordinate the kitchen, proper recipe techniques and high-quality consistency of our products.
ESSENTIAL FUNCTIONS:
- Ensure all food served is prepared properly and meets quality standards.
- Place prepared food on plates, platters, etc., in an appetizing and eye appealing manner to be served.
- Instruct all cooks on their duties, organize the cooking line for safety and efficiency and spot check food preparation procedures for quality and accuracy.
- Ensure enough stock is on hand to accommodate business demands.
- Ensure the entire kitchen meets hotel standards and Southern Nevada Heath District (SNHD) regulations for food preparation.
- Clean food spillage at workstation(s) as needed.
- Discard spoiled food from workstations.
- Completes inventory and ordering of products used in daily menu items.
- Review and approve daily payroll sheet as needed.
- Prepares and (adjusts as needed) daily work schedule.
- Performs and documents employee evaluation, discipline, and commendation.
- Maintain appearance and is always appropriately groomed and wears the uniform provided.
- Direct and instruct kitchen staff in their individual tasks.
- Additional related duties as requested by the kitchen supervisory staff.
PHYSICAL REQUIREMENTS:
- Ability to work from a standing position for extended periods of time.
- Physical tolerance needed to work in a humid environment that at times will exceed 100’F.
- Dexterity in the hands and fingers needed to effectively manipulate the tools and utensils used in food preparation.
- Visual abilities (closeness and depth perception) to ensure quality food preparation and personal safety with various types of equipment.
- Ability to lift approximately 50-70 pounds.
- Ability to perform reaching, stooping and/or crouching motions repeatedly.
NON-PHYSICAL REQUIREMENTS:
- Basic reading skills.
- Basic writing skills.
- Basic mathematical skills.
- Basic computer skills.
- At least 5 years high volume cooking experience. Skilled in all aspects of international cooking.
- At least 2 years kitchen supervisory experience.
- Strong interpersonal and communication skills.
- Specialized culinary training preferred.
EDUCATION/EXPERIENCE:
- Ability to meet age requirements (21 years).
- High School education or equivalent.
CERTIFICATE/LICENSE:
- Employment eligibility for the United States.
- Southern Nevada Health District Food Handler Card (Health Card)
